Southern Squash Casserole

This is a traditional squash casserole.
3 - 4 lbs. yellow squash and/ or zucchini, par-cooked for 5-8 minutes in water then drain.
1/2 cup melted butter
1 medium onion, grated
1 carrot, grated
8 oz. carton sour cream
1 can condensed cream of mushroom soup
1 6oz box any flavor stuffing mix
Add shredded cheese on top if you like.
Combine all ingredient bake at 350 degrees for 35-45 minutes, longer if you like yours good and brown on top and bottom.

I have been making this exact casserole recipe for over 40 years and I found it in one of those "church cookbooks". It was called "Mrs. Mooney's Squash Casserole". It is a classic recipe and I don't remember hearing a single negative comment anytime I ever served it. Thanx Phyllis ! Folks, you wont regret giving this a try.

May I ask, the stove top stuffing mix, doesn't it have a seasoning package in it as well?? Its been a long time since I bought any, if so Ms Phyllis didn't add it, right? Do u keep for something else or....

@@susanlocklear2468 The seasoning is mixed in with the bread crumbs, not enclosed in an extra package. At least that is the way it was packaged last Nov, when I used it!

My sister was a Southern cook and always made this casserole at Christmas. I think she used a can of cream of chicken soup because of her family's aversion to mushrooms. Thanks so much for all the work and love you've put into your videos.

I've looked at a lot of squash casserole recipes on you tube , and I like yours the best. I'm making my first one tonight to surprise my wife ( I'm always after her to make another one, so she told me I ought to learn how :-) I'm gonna make it using your recipe :-)

You could use other cream soups such as chicken or celery. Meat could be added if you have some cooked and ready to add in...chicken or turkey or ham.
I really love that you cook for just the 2 of you guys. My kids are grown now and its just the hubby and I. And I'm having trouble cooking for 2 and your recipes are wonderful Thanks Miss Phyllis :-)

Just made this, had some fresh squash from the farmers market I needed to use. I did add a little cheddar. It's Wonderful, and So easy...Thanks for the video Phyllis. My maternal grandmother as a Stokes...she was known all over for her cooking. Thanks again!

If you can believe this...we were a family of 10...my military father did not like casseroles and none were ever had in our home! I have used cream of chicken or even cream of celery soup instead of mushroom. And I put half the stuffing mix in the casserole and the rest on top for a crunchy topping.

I also use cream of chicken instead of mushroom and instead. I also put a cup of grated cheese in the casserole mix. Instead of putting the stuffing mix in it. I put it in a bowl and mix with a stick of melted butter. Then I take it and put it in the bottom of the pan like a crust. I just save enough to put on top. So to finish it before you put it in the oven. We top it with a little grated cheese and the left over stuffing mix. I love this casserole it's so yummy!!!

crushed potato chips make a good topping too. or french fried onion rings crushed up.

We had a Stacy's Buffet not too far from us, that occasionally had a summer squash casserole on the food bar. It was so good. I will definitely try this, using homemade cream of mushroom soup.

Looks great. I forgot this favorite and love the tip about cutting the squash in larger chunks. The yellow squash kind of disappears into the casserole otherwise. Good call Phyllis. cream of mushroom, tomato soup, cream condensed soups ---- made with a can of milk, not water, are much more appetizing. Most folk know this . Leave it to a guy not to (a friend ). What beautiful sweet squash and good lookin' red onions!

Do you add anything else liquid to your recipe?
Yumm I, m going to make that tomorrow , It is Augest 3rd our squash are getting ready , we also have tomatoes ready .Happy gardening, now, get busy and grow something .If you don't have a back yard to grow something , the you can plant it in containers or buckets .Just make sure, you drill holes in the bottom of the container's so water can, drain out.Happy gardening. Love this recipe I didn’t boil my squash instead I cut them up with onions with a little butter and stir fry my squash some how if gives it a way better taste boiling your squash seems to hold more liquid then I added my ingredients just like Phillis did with a little cheese on top it was wonderful. Rest easy Phillis gone but never forgotten

I think we will resurrect this dish at our house. My teen just got braces and it's hard for her to eat the turkey burgers or Salisbury steak type dishes, even when we cut it, it's hard to chew because they altered the top of her molars and it effects her bite now. Zucchini are plentiful in Sept & I have some dried bread I've been saving that I may try in place of the stuffing? Maybe I will get the lower sodium cream of mushroom and lower fat cream cheese (I like the lower fat, but I can't do the No fat-blek!)... so I wonder 'how low can I go?' Ha! We'll see if I end up with any good flavors like you. It's a Great Dish you made! I wish I had 10 bags froze up too! I have froze it shredded for zucchini bread, but never tried it frozen sliced?
I have now made this twice my husband absolutely loves it. The second time I made it I did not have sour cream so substituted smooth ricotta it worked out great you could not taste any difference and I felt maybe slightly healthier. Thanks for some really great recipes Phyllis :)

I think you wouldn't add any liquid since the liquid that was in the bag of zucchinis and squash was liquid that came out of the veggies themselves when they were frozen.. not any added.. :)

I never liked squash until I had this fried squash recipe. Slice 6-8 yellow squash to about 1/4" thick; thinly slice a med-lg. yellow onion (separate the onion slices into pieces), put squash and onion in a frying pan that's been heating about 1/4" of oil. Add 1/2 t. powdered red pepper and 1/2 t. salt (or more of either to taste). Cook, stirring occasionally, until squash and onions get golden brown; both will tend to fall apart. Add 1-1/2 t. cumin seed and stir to cook the seeds. That's it. Serve with hot pita bread or flatbread and enjoy. (Can substitute egg plant or other similar vegetable for the squash in this recipe. Okra, squash, egg plant, you name it, they all taste unique even though the recipe is the same.) You can substitute black pepper in the squash and it's great, but black pepper doesn't stand up in this recipe for okra or eggplant.--RoseMarie
I'd add a jalapeno too and crunchy fried onions like another commentator suggested.

have a comment to add, ( 5 months later), but watched this a second time and as to the "vegetarian" thought, you are correct, that although not vegan, this recipe may qualify as vegetarian IF there is no chicken stock in the soup, as there often is.
How much squash and zucchini did you add? I want you to try this, it looks delicious!
