South Shore Bar Pizza: The Story Behind the Style
Bar pizza is a staple of the South Shore of Massachusetts, dating back to the late 1930s. From fourth-generation mainstays to newcomers, almost every town south of Boston seems to have a bar that has a personal pan pizza - and a loyal customer base to match it.

I'm a simple man. When I see a type of pizza I've never seen before, I go to try it.
I missed seeing Town Spa Pizza in Stoughton included here. My favorite is linguica, onion, banana pepper - extra crispy.
The Town Spa in Stoughton, one of the best. Also Js Flying Pizza in Bridgewater. Amazing

I agree to both town spa and J's flying. I think Central cafe in Middleboro also makes a good onel. I'll eat a Lynwood or cape cod cafe too.
Alumni Cafe in Quincy had best pizza - Rob Routier and his brother was the pizza cook at one time. Made the best pizza ever. Anyone remember?

I am proud to be a former South Shore resident. The local pizza legends deserve to stay in business and thrive until pizza no longer exists…yeah, that’s not going the happen! Now, I have to try to recreate the bar pizza I grew up loving because nothing close exists here in the south. 😊

Don’t be afraid to ask your local pizzeria to make your pizza dough thinner! I’ve done it!
It was nice to hear from the families that run these places and the passion and legacy behind them. Thanks for doing this. Nice job putting it all together. 👍

He did a fine job indeed! I wonder what he would think of yours....
From Western Mass but will try to get to the Lynwood whenever in the area. All are good but The pizza with Linguica, to die for!
My grandfather was also a Lithuanian immigrant who settled in Brockton and worked at Knapp shoes. He became known as the honorary Mayor of Brockton. I was born there but moved out of state when I was 5. As a teenager I lived at the cape with my uncle and grandmother. Friday nights my uncle would always bring us bar pies from a place in the Lithuanian section of Brockton. To this day it’s my favorite type pie and I buy them on Gold Belly.
My wife is from Brockton and got me started on “Bar Pizza” when we visited her family. Now it’s a MUST HAVE stop and we’ve even ordered frozen Cape Cod pizza to go. Cool to see all the places putting their own spin on it.
New York, Chicago, Michigan, even Connecticut has been popular on the pizza scene lately. I'm glad Massachusetts is getting some recognition.
I grew up in Hanover .. and Cape Cod Pizza was a treat to have when my parents didn’t want to cook. I’m now a 7 year transplant in Los Angeles and I wish there was some decent bar pizza ANYWHERE in this city.
I grew up on Town Spa as our number one go to! The Lynnwood was a close second for sure.
I've had pizza from the Cape Cod and Georges many years ago. Always great pizza.
Great video. Nice to hear the shout outs to Tip Top, Brockton Cafe, Georges... Back when pizza delivery really took off in the 80's there were Tip Top trucks driving around Brockton with 'Stop me and I'll sell you a pizza' painted on the side.
Got Lynwood last night. Havent been since the passing of my brother 12 years ago. it was his favorite and we went in his honor after his burial. Great pizza as always.
what a great video all of the owners and the managers were so compasionate about there products. and they all encouraged each other Thank you
I grew up on the south shore and I've eaten almost every one of these places, hell I grew up with Tony from Poopsie's. Really awesome to see these places all running still.
This is an awesome video. Thank you for making it, & letting viewers know about this style of pizza.
It was so fun to see and hear about the town of bourne in this. So many times my grandparents' town is left out of these types of videos. Thank you for including authentic no touristy cape cod.
absolutely brilliant video. really love this style of pizza and this is a great insight into its roots
Awesome video and great stories from some incredibly passionate and humble folks. The comradery is very similar to the tavern style pizza in the Midwest. I know I love making South Shore Bar style in my 10" pans 🙌
Great job with the video. It was awesome to see and know more about the local pizza shops we come to love and enjoy. As a home pizza enthusiast it was cool to pick up some tricks from the best. Took me 10 years to perfect it. Being in FL I have no choice but to make it myself until I visit. Mine are like Lynwood. Some sauces on the videos were runnier than others and just seeing that you can tell whether it was crushed with paste or crushed with puree or just crushed. Granted each have their own seasonings and different cheese blends. Anyway Cheers to the man who started it all, Louis Ghelfi.
Great video, make more of this format and your channel will grow. Editing, backing music and camera work is excellent.
Really knocked it out of the park with this one. *chef's kiss*
Wonderful! Eating at Town Spa for 50+ years. Had Poopsies, Lynwood, all fantastic. The Sps is the first place I visit when I get back to the US. Pizza in Europe is nothing like South Shore Bar Pizzas
EXCELLENT VIDEO Thank you so much for sharing this video
Truly excellent video, a real education!!! Thanks so much!!
Great video! I live in New Bedford, Massachusetts and have been blessed recently to be able to visit Lynwood, Cape COD Cafe, The Venus Cafe, Poopsie’s, Town Spa, Johnny Kono’s and Monte’s in the North Shore so far! Fantastic bar pizzas can’t wait to continue my journey.

We tried to get there every Tuesday. It’s a damn CVS now. Before I forget, try gillis family tavern in Plymouth. They recently switched names, but still got the Mac attack bar pizza, must try.

There is no dive bar in the world that has three or four people back there making pizzas. I have worked as a cook at 9 different dive bars across mass and there is one or two cooks max at all times cooking prepping doing the dishes and everything... 😂 what a joke
These look amazing. I make a lot of my homemade similarly. When the sauce and cheese become one, you know it's sacred.
The first beer I ever had in a restaurant was in Cape Cod Cafe in Brockton in the mid 70's. Had their pizza before that, had beers before that, but the combo was the best thing ever in my young life. (ETA: totally forgot about the Tip Top! Been to the Lobster Trap many times, thanks guys!)
Great video. Thank you.
Great video, seriously man great job
Wicked interesting
Was a pleasure to watch this video.
You guys are a credit to humanity.
Seems like an awesome place. Cheers from Florida.
As a big fan of the pizza in and around detroit i feel like this pie is a kindred spirit of sorts, especially when you mention the lacing. a detroit pie's lacing is from cheese typically, so its cool to see a different perspective.
Flying home back east in a couple weeks ago. I can't wait 😋
Great job Mr. Mortimer! Part of me is complaining that the folks at Town Spa in Stoughton weren't included, but you can't have 'em all. Thanks for introducing some new places to stop and try!

Venus pizza goes hard. Ludicrously scrumptious pies, nothing compares.
Great video! Love the Lynwood!!
Pretty cool. Did not know about this style of Pizza.
My hometown pizza joint in Rockville Maryland made pizza this way,the large was square, just two sizes and all baked to crispy edges with perfection every time.
Don't forget to get the best pans from Bobby Owens at Bay State Restaurant Products in Brockton. I have Lloyd's pans as well Bobby's and pizzas slide right out. This was a great video. I remember going to many if the pizza bars noted as a kid. Just like it was stated-it was a big deal going to get the pizza with your dad!
Da Lobsta Trap! Gonna have to check out some pizza spots next time I'm up The Cape!
It's a little bit similar to Detroit pizza because of the caramelized cheese and sauce at the edge of the pan. I'll have to pick up a 10" pan and try this at home. I do like the frozen Cape Cod pizzas from the supermarket, although they're not exactly the same.
Bar Pizza looks really good. I'd like to try it.
North West of Boston, my go to for pizza was George's in Lowell then Dracut. Lord, I hope they make a comeback somewhere!
looks great!!!!
Man I would love to try this style of pizza
Cape Cod Cafe I feel like is the original. But I really love Stoneys in Middleboro. They have a nice signature flavor because of their oven kind of like the original CCC.. Try Stoneys in Middleboro for a quality Bar pizza..

OKAY People... I need your HELP. I used to work out of Boston for 12 years... and never got to eat a SSBP... How sad is that? Now... I am in the midst of moving back to Albuquerque, New Mexico (US) to RE-Open my Acting Studio and also to have Dinner Theatre for my Acting Students. I have had a Cafe before... so I know the drill... but this time, if possible I want to have a Food Trailer called "The Dessert Bar"... where not only can the cliente buy Dessert but also have a wine and beer bar to go with this Dinner Theatre.. "Cash Bar".... You have to have Beer to go with a South Shore Bar Pizza... I need to know where I can BUY the Pans... and I need to learn the BEST Dough I can make... what is the best Cheese too Thank you for your help... I really want my Acting Students to experience the Camaraderie of knowing how special it is to share a South Shore Bar Pizza... The Best of the Best. Thank you so much, Judi

QUESTION: What do most of you like... them putting the Pizza in a BOX... or a Paper Bag with two plates, one on the top and one on the bottom?
@nodayatthebeach
2 күн бұрын
I preferred the plates and bag. When I was growing up in Stoughton that's how the Town spa used to do it back when they were in the center next to the old police station. We had family pizza night every friday from there.

@@nodayatthebeach EXACTLY... I agree... it is Nostalgic. Plus it's just Family Familiar, and if you have to eat it away from home... You have 2 plate and a sack to throw everything away once you're done.
Two places worth visiting. Lynnwood pizza in randolph, and cape cod cafe in brockton. Look in the end its a small amount of doe an some cheese an tomatoe sauce. Town spa, legit, serves you a tiny pizza and charges more. Want bbq sauce instead of pizza sauce, they wack ya more money. I mean they might as well not serve sauce, an ask for a buck to add it. Couple other spots worth going to too not mentioned. So skip the town spa in stoughton.
tips tricks for the dough, how does it differ from a traditional recipe?
Never seen pickles on a pizza before -- but think I might like it --- Would be a nice contrast of the pickle with the tangy sauce and crispy edges.
