Yeah, Jono, the best onions to make these out of are Vidalia Onions. They tend to be naturally big like shown, and they have a hint of sweetness to them. Almost to the point where you can eat like like apples. I remember back in the 80s when it seems that variety first became popular, we used to get them all the time. Loved them, and I wasn't even a fan of onions before that. But it's their sweetness, that cuts thru that strong onion flavor that a lot of people don't like. So they make the perfect bloomin' onions.

What we call corn starch, most of Europe calls cornflour. American corn flour is something different. As you see in the video, corn starch looks like baking powder. So if you look for cornstarch and can’t find it, look for cornflour. If it looks like baking powder, you’ve got the right thing.

just a cook's note for you: In the USA if we say chili powder it isn't just dried powdered chilies. It is actually a blend of spices, used often in making chili (famous Tex/Mex dish of meat and spices) It contains a variety of chili peppers including paprika at times (smoked or not), Mexican Oregano, garlic, salt, onion, cumin. Often people from other areas don't know this and use just powdered chili peppers like cayenne powder, much to their disappointment. Hope that clears up any confusion. (if you are using just one kind of chili, dried and powdered, we would say powdered (name of type ) chili. Now you all go and make some chili with chili powder to go with that wonderful blooming onion!

Where I live, electricity wasn't available until the late 1920's or 1930's. The movie O Brother Where Art Thou major plotpoint is the flooding of the valley where the protagonist has a house. The Tennessee Valley Authority flooded places all over the place so they could build hydroelectric dams to generate electricity. Tupelo, Mississippi is known as the "first TVA city" to get electricity, but it took over 10 years to run lines to supply north Mississippi with power and a lot of poor people didn't get it because wiring a house was expensive. But the first thing my mother's parents did in the 30's was to get an electric stove so they didn't have to cook on a woodstove. My dad's first electrical appliance was a refrigerator so they didn't have to buy ice every week from the iceman, who would deliver a cubic foot block of ice for their icebox, and they didn't have to deal with draining the water out anymore. Blooming Onion is a trademark dish for the Outback Steakhouse, an Australian themed American steakhouse chain. A lot of steakhouses and other restaurants have reverse engineered their own variations, including onion petals, which is a blooming onion, but the onions were cut into chunks, resembling flower petals, then breaded and deep fried. I kind of like onion petals better because you get a more uniform coating of the breading and it's easier to divide and dip. Whenever I get onions, I get Vidalia onions, which were developed in Vidalia, Georgia. They're so sweet, you can eat them raw without any heat, but a sweet and savory flavor.

Blooming onions are the BEST!!! Although tedious, they are not hard to make.....just make sure you have a pot big enough to accommodate the onion and oil. A trick to being sure you have just the right amount of oil is to put the onion in a ziplock bag and place it in the pot. Then add enough oil to cover the onion plus about half an inch or so. Take the onion out of the bag and process as he did.

There's a simplified version of this that you can make much easier if you don't like deep frying. Cut the onion the same way, put some butter (or even better, herb butter) between the petals, wrap it up in aluminium foil, then toss it in the oven when cooking a roast; also works on the BBQ It doesn't look as cool, but it's a no-fuss way to caramelise the onion.

Mesquite is common in the Southwest. I'm on the East coast of the US, so hickory or a fruit wood (apple, cherry, etc.) is more common for me. And you can use any herb and spice mix that you like for it. You might want to look for the Amish onion patty recipe too. That's a winner and easier to make.

If you want to grow big onions, try these. 'Kelsae Sweet Giant' onion holds the Guinness World Record for the biggest onion, weighing in at 15 lb 5.5 oz and with a whopping 33 inches diameter. It is a fantastic option for anyone wanting to show and exhibit huge onions. It is a long day variety that has a sweet flavor and can either be cooked or is mild enough to be eaten raw. While you may not set a new record, the 'Kelsae Sweet Giant' is a reliable and high-yielding variety that can be grown from onion seeds or onion sets and will take 100 days to grow from transplanting.

Did you take note of the temperature the cooking oil should b? 375°F (190°C) That very important. Not just for Bloomin' Onions, but for all deep fried foods. Because the act of deep frying does three things, well two mostly, but three if you count everything and that these 1) it seals the outside batter rather quickly by browning it. 2) That then allows the food inside to cook while protected by the already sealed batter. 3) Because the batter has sealed in the food, it allows all the juices to stay within the food. Now, of course you can over fry something where you dry out the batter so much that it becomes hard as a rock and ruins the food item. Last thing you want is a chicken tender that's gonna break some teeth, ya know? So you just need to know how long in the oil is long enough. I think 5 minutes is about average for most foods. I've heard that British Fish & Chips tends to be fairly greasy. And if I put bets on what's causing that, is that they don't let their oil get hot enough. Because if your oil is not up to that 375°/190° mark before you put your food in, that oil is just gonna soak into your food and it's gonna one nasty tasting greasy mess.

If you cut a lot of onions and mince a lot of garlic you know how hard it is to get that smell off of your hands. So, here is a life hack: Turn the cold water on and rub your hands and fingers thoroughly on your (stainless steel only) sink. Alternate between rubbing your hands on the sink and rinsing them a few times. Rinse you sink when done. How it works: Sulfur molecules in the onion/garlic (which is responsible for the smell) is attracted to the stainless steel and will loosely bind with it. This completely remove the smell from your hands in much less time than it takes to actually wash your hands with soap. And with soap you STILL have that odor lingering.
