Sour Porridge (All quantities are in the description) |

Sour Porridge | Perima's Kitchen Recipe!
Ingredients:
2 cups mealie meal - add 3 cups water & let it ferment in a closed container for approximately 5 days.
You can expose to some sun to speed up the process.
Once it’s ready , you can remove excess water / froth / foam.
Add boiling water to your pot approximately 1 litre & salt. You can then proceed to add more boiling water while cooking to achieve the desired consistency.
Cook on medium heat & whisk for approximately 20-25minutes.
Garnish with sour milk, diced spring onions & onions ( shallots or chives whatever you have available )
Serve with Mixed Vegetable Curry, Pumpkin Curry, Braised Cabbage & Chilli / Lime Pickle or enjoy a cup or three.

    This takes me back all those years..how could one ever forget sour porridge, look as teens growing, we didnt care who belonged to what faith, we were a crew so we did what crews do best, we chowed...at every household so sour porridge, rasso, fried pumpkin etc from my tamil brethren was most welcome and damn delicious. Aahh Sol...u have invoked so many happy memories now,my best of friends, we were brothers, we were all raised together, the smells of porridge prayer, the sour porridge, the vadhe etc shared amongst brothers, tears swell as many of them dont even live here anymore and a few have passed on..it was home, the emotions running thru me right now watching this is unreal...thank u for taking me back to my roots, I miss this, I miss them..I miss the authencity of innocence...

    @@PerimasKitchen Got so miserably tired of watching other chefs feeble attempts at classic cuisine, when you are accustomed to a master at work, other are made to look like apprentices..and the master is so back...

    Awww 🥰 I’m definitely no master either but I believe simplicity & authenticity is key in comparison to extravagant dishes. Those simple flavours itself takes you on a culinary adventure. I just try to keep the method easy making them the ultimate classic recipes rooted in timeless memories. 💕

    Lol I have to share my porridge prayer story. It was the first time meeting my boyfriend's (now husband) family and I told him how I enjoyed eating my porridge i.e. mixing the curry and porridge together in a mu. He was of course mortified and told me not to embarrass him. Needless to say I won the family over and got to enjoy my porridge my way😄😄😄

    Love this and thinking of standing by the outside fire mixing the pot during porridge prayers. Getting shouted by the cook not to stop stirring or you would get lumps 😂😂. Thank you once again

    Love sour porridge, you make everything so easy for us. Just 1 question, do you add all your soaked mealie meal to a litre of boiling water

    Thank you Suria, yes I add all my fermented mealie meal to a litre of boiling water but while it’s cooking you can start to add more until you reach that desired consistency. Remember it will start to thicken so don’t worry you can always add more boiling water & fine salt as you require. Love ❤️ Solina

    I don't like the fermented mealie meal I cook my porridge thin I add maas or sourmilk as its sometimes called a little bit of lemon juice and salt to taste delicious been making it this way for over 35 years

    Yes that’s a lovely alternative too 💕 I love the taste, the probiotics in the fermented version is a bonus.

    Hi there . If I don't want to make all the porridge one day how many more days can I keep the soaked (fermented) poridge for ? And where must I keep it? Freezer?

    Up to 7 days. It ferments better in warm spaces so covered in your kitchen should be fine ❤️🙌🏽
