Vegan baked stuffed shells (I doubled this recipe for my family of 7)
16 oz wheat jumbo shell pasta
2 large jars of your favorite marinara
1 cup packed spinach, chopped
Basil for garnish
For the ricotta
1 package firm tofu (pressed in a towel for 10 minutes to get out excess liquid)
1 cup raw cashews, soaked in hot water for 30 minutes
1/4 cup nutritional yeast
1 Tbsp Apple cider vinegar
1/2 tsp salt
1 t garlic powder
1/2 tsp onion powder
Drain the cashews then pulse the ricotta ingredients in a high speed blender until mostly smooth, using the tamper to push the ingredients in the blade.
For the parmesan
1 cup raw cashews
1/4 cup nutritional yeast
1 tsp garlic powder
1/2 tsp salt
Pulse the ingredients in a dry high speed blender on medium / low until powder fine. Store in an airtight container in the fridge or counter and garnish on all kinds of pastas.
Cook pasta halfway then take out and place on a baking tray lined with a bit of olive oil to keep it from sticking as it cools. Keep the pasta sheets separate from each other so they don’t stick too. Then place a thin layer of marinara on the bottom of a large casserole dish. Mix in the chopped spinach into the ricotta with a spoon. Then fill each shell with the ricotta mixture and place on the casserole dish. Top with plenty of marinara and sprinkle on the cashew parmesan. Bake at 350F for 20 minutes covered with aluminum foil. Then take off the aluminum foil and bake for 15 more minutes. Let cook for 5 minutes out of the oven then serve!

    Spend all the time you can with your children, they grow up so fast. My son got married yesterday and I can’t believe how quickly the last 28 years went by. I have lots of beautiful memories of his childhood that made me cry as I watched him dance with his bride yesterday.

    How!? How do you get paid almost nothing and still make a household run? How because while I have all the "tools" to raise kids I do not have a "means" to raise my kids.. and working is the only the only way to provide those tools for kids.. I don't understand.

    Having children is a full time job, and you have many of them! You juggle a lot already! Take a break for a while or make some shorter videos or just less posting in general…but always prioritize the family! You have a beautiful one ❤

    I left my very well paying job in corporate Healthcare in October due to high stress and a myriad of stress related health issues. I became a special education teaching assistant and it was the best decision I could have made for my well-being and mental health. My husband and I both realized that no amount of money is worth losing your mental health to a company that will replace you with in 14 days of your death. You take care of you and your family by doing what is best for you and your family. Much love ❤❤❤❤

    Totally agree, great if you have the option to cut work back and still maintain a home and all activities your kids want you to do do and I am glad she is able to achieve this and be happy for her. But there is many esp in this recession that definitely do not have an option to cut back work due to financial restraints and thus are not able to spend that time with our loved ones, it’s sad that the world is in this state that you have to choose work over family:(

    Ellen, I feel this 1000%. I’ve been experiencing a “burnout” type mental breakdown once a week lately and I just keep thinking “it’s too much, it’s too much”. So I’ve been thinking heavily on what I want to/can let go of so my life is simpler and so I can savour my life as a mom to my toddler - which is the most important job I’ll ever have. As a fellow woman and mom my heart encourages you to do what you need to do ❤️

    She said she “rarely meets someone who doesn’t feel their life is full”. This statement is far from the truth and I Don’t believe that to be true . I’ve never met anyone who said their life is full. Most people I know and have met are unhappy and unfulfilled. Most want people to think they’re fulfilled and have a close to perfect life when that is not their reality.

    This video hit me at my core! This last year has been a whirlwind for our family as my oldest had a traumatic experience with kindergarten in public school resulting in me pulling him to homeschool. Having my children home more has made me really struggle with working full time as I have felt I’m juggling too much and as a result, failing in all areas. I know that not everyone can afford the luxury of putting work on hold however it requires lifestyle changes. A homeschool mom friend I made, chose to sell her dream home and downsize to align her priorities with her heart. I have been feeling that this might be my future as well.

    I’ve being around for a while watching all of your videos. They inspired me so much and changed my way of eating and living in general. I think it’s the same for almost 800k of your subscribers. And you could influence in a positive way even more people and make this world a happier place. Please don’t stop posting videos! I truly understand your dilemma here. But, May be there is a way to drop on something else, like podcasts (don’t understand me wrong, they’re great too)?

    I feel you. I had a big crisis last year and my gamechanger was a working space outside of my home. I work 4 hours a day now in my new space while my husband is with the kids. Afterwards he gets his 3 to 4 hours. We have less time all toghether as a family, but both of us are more relaxed now and I'm starting to become fucused and more creative with my work. I think most people won't realy get the problem because most people have a very different lifestyle.

    This woman ,mother and wife speaks volumes with words deeds and actions…… to evaluate what we are building in the moment and adjusting to be our best self so if it years later, we can look back and not have massive regrets or when it comes to our children losing precious time.

    I agree with this so much, you can't give more if you don't take that energy/time/space from somewhere else, it is finite! I do wonder what happens if someone has to work to make ends meet but wants to work less or be more present but just can't. I suppose then it's more about perspective and what you do with the time you do have with family ❤️

    This resonates so much! I just had my second child and I decided to take a lighter part time job now so that I can focus most of my energy on the family. It feels hard sometimes to not challenge myself too much career wise and to be less social etc but I love having more headspace and time for my loved ones ❤

    Totally agree, mum of 5 here, the balancing act is hard work, I squeeze in as much as possible every second of the day, I have had to prioritize exercise as a must-have otherwise I don't perform at my best as a mumma. Sometimes I take my dogs running in the dark after the kids have gone to bed but it is worth it. I am not looking forward to winter here in Aotearoa NZ as there are fewer daylight hours to work with.

    Love this. Recently I’ve dropped more off my plate to focus on my family and invest there more. I thought maybe I’m just being lazy trying to not handle as much but as I’ve noticed in the different folks around who chase careers or fill their time so much, especially the moms, it seems something always gets neglected and I can tell pretty quickly it’s the kids. It reminds me I’m not going to regret keeping my focus on my family now. That’s where I want my success to be.

    I dont have a lot to say, I dont comment very much to youtube videos and i always love yours lol. but i really loved this one! because im in a tough season, nursing school, hubby working on the road, and 4 soon to be 5 kids. I cannot get it all done! and its so easy to feel defeated! so thanks, this was great!
