Smoking Wild Pork Leg on The Weber Master Touch Plus (Low and Slow)

First time using the new Weber bbq, and first time trying out the long and slow smoking system. Definitely learned that this is a great Low and Slow smoker I need to know how to use properly.

    Hi Mike great score on the new weber.The weber coals lasted a long time i usualy have to reload with my samba coals for the long cooks .Pork looked nice.Hope you guys have a sweet xmas .Thanks for all the vids this year enjoyed them all.     Hi Maree and Andy, I am very lucky alright with the weber and I was surprised how long those weber coals lasted too. Thanks to your guys generous support on Patreon. I can keep plodding along and try and scratch a living out of KZread . I owe you a couple of shirts once I figure out a design and yes that kingy is definitely on the list lol .     Do you think wrapping it may have sped up the cooking? Also did you rotate the meat as it was cooking quicker on one side than the other? I have this set up with the deflector, but so far haven’t tried it, only used the minion method to smoke pulled pork. Thanks for the vid 👍

    Your top vent should always be open all the way. Control intake from the bottom vent. Closing the top is how you get dirty smoke.

    That new Weber is great Mike, got a Weber smoky mountain for Xmas and they're great as well. I couldn't keep the temperature low with the old Weber but this new one keeps the temperature just right. Enjoy mate, very nice.

    Looks good, one question. Do you fully close the bottom vent of the bbq? I had the same setup today but the heat was way to hot really fast. I had the bottom vent open, could that be the cause?

    3:46 he pulls that handle left. That closes the vent to around a quarter i think

    Try 250 degrees Fahrenheit with 160 internal temperature allow to rest atleast 30mins it won't go cold

    With these ones never, they could easily have lasted a few more hours because the vent was nearly closed

    Please dont start the fire inside the grill especially with chemical firestarters they leave residue and smell. Use a Starter chimney its faster you need less fuel to start it and it doesnt get the firestarter fuel taste

    Try a snake method.maybe get rid of that heat deflector shield

    That ring and diffuser looks sht (I've got one but haven't used it yet which is why I'm watching some videos). Firstly the water tray has to sit right on top of it so it's going to boil and empty real quick. Secondly there not much room for wood and third you have no access to it to add more wood or charcoal if needed. I'll stick to the snake mehtod I think.
