Smoked Pork Picnic | How to Smoke a Picnic Shoulder for Pulled Pork

Today I am smoking a 10 pound Pork Picnic Shoulder. You can smoke a pork picnic in any kind of smoker (pellet grill, pellet smoker, Weber kettle, offset stick burner) but I decided to fire up my Gateway Drum Smoker for this cook.
If you are following along, set the smoker to 275 degrees, spritz the pork picnic shoulder every hour for the first five hours, and then wrap it tightly in aluminum foil and continue to cook it until the meat is fall apart tender. For me, this happened at about 200 degrees F.

Just starting to watch this. Have no idea what I’m doing, but I want to surprise my husband and make him a pork shoulder on his new pellet smoker. Any advice? Hope this works. He will be home later today. Thank you for the video, how do I get those pork rinds you said you weren’t going to do? I really don’t want to mess this up! How many hours does this take, my pork shoulder is 10.68 lbs. Thanks for any input.

I use a ball for foil on top of the bone end then it won't pop the foil.

Thank you, Seth. Save all of the juices and fat. I put it all in a crock pot and add about a half cup of water. You may need to add more water if it sits in there for a long time. The one thing I don’t do is add bbq sauce to it. I put out the sauces on the side and give everyone a choice of what they want just like in a bbq restaurant. It makes it fun and for the people who care, they get to taste the smoke 😁

I was going to ask the same question and my other question is what do you serve it with/on? Do you just put bread on the side? I'm assuming this is pretty no brainer but people are always getting very creative now a days and I like to be a copy cat. 🤪😁 I scour the internet looking for smoking recipes and I always come back to yours. So far, anything that I've made from watching your videos has NEVER let me down. I am the envy of my neighborhood plus I share everything. Smoking a salmon today. I didn't find a smoked salmon video in your library. Did I miss it or do you not have one?

I like to put out some buns, soft taco shells, a couple different bbq sauces, sweet and spicy pickles, some thin sliced pepper jack cheese, shredded lettuce, baked beans (to name a few things). I have not done a salmon video yet... for some reason the majority of people I cook for do not like it.

I usually shred it and store it in ziplock bags in the refrigerator. To reheat it you can just put it in a crockpot. I’ll add the leftover juices and a little bit of chicken stock to the bottom to keep it from drying out. You can also reheat it in the bags if you have a sous vide machine.
Mike, I know you've probably addressed this before but do you have a preference/favorite in gloves??

Terry, set your smoker to the same temp. It doesn't matter what kind of cooker you are using. The secret is to cook to tenderness instead of time. When I need to have something cooked by a certain time I work backwards... If I need the food to be served by 5pm... I know it needs to rest for at least an hour after I take it off the smoker... I budget for 1.5 hours per pound...so for a 9 pound picnic, I want it in the smoker around 2:30am. If it gets done an hour early, no problem... keep it wrapped nice and tight in a dry cooler and it will stay hot for hours. If its taking longer than you expected crank up the heat the last couple hours to help it along.

I usually freeze it and save it for flavoring my homemade soup stock. There is a lot of fat on there that renders down nicely.
Is the ambient probe different from the probe used for the internal temp ?

Hi Rob, yes it is. The ambient probe is much shorter and it also does not have a sharp end on it. It’s nice having it smaller because it doesn’t take up too much room on the grate.
