This was my first time ever making a turkey sausage and it won't be my last. Not only is turkey sausage a healthier option, but it's packed with amazing flavor too.     Trick I learned at a butcher shop. Instead of cubing the meat cut into long thin strips. The augur in the grinder will grab them and self feed, you won't need the plunger. I remember struggling to keep up with the amount I needed to get done in a day until the boss showed me this method.

    Also add the seasoning to the chunks and grind into meat. Incorporates the seasoning a lot better.

    Hey Joe, I was thinking about what you said about the 1.5% rule of thumb when comes to the salt and some turkey you did once before came out salty when you applied this rule. I was thinking, alot of whole turkeys and breast come pre pumped with a salt brine solution the percentage seems to vary among brands was the turkey you used that was salty pumped with a brine? Maybe a all natural no solution turkey can handle the 1.5%

    I appreciate you listing out ingredients by weight. There are many people on KZread sausage making, but very few show actual amounts/ratios used. I know you use premixed seasoning blends frequently, but I appreciate you giving us the details in case we want to try it ourselves without buying a book.

    I was a little Leary of this . The 25 grams of sage seemed like a lot.. But it was perfect.. I only did one variation and that was smoked black peppercorns ground. And one and a half pound pork shoulder and one and a half pound beef hard fat.. .. It came out great.. My test sample before stuffing.. I really really liked it.. Pulled out 3 lbs for breakfast patties..a great turkey recipe... In fact this is the first time I can say i enjoyed turkey sausage.. Great job on the recipe... Thank You

    Awesome! I am looking to make a chicken and rice or turkey and rice sausages. I was getting them from a company in Minnesota but they burned down and are no longer on business. They were amazing. I've heard 5lbs of meat to 1- 2 cups of rice as a starting point.

    Thanks John. I would use very little charcoal and only feed it more if it needs it. Charcoal and some chunks for smoke would be all you need. 👍

    When you are measuring the amount of meat to fat - are you doing a ratio of meat to fat (aka: 3:1 - 3lbs meat, 1lbs fat therefor 75% meat, 25% fat) or are you doing it as a percentage of total mass (aka: 10lbs total - 8lbs meat + 2lbs fat = 80% meat, 20% fat)?

    Some people don't and some do. You don't have to use any fat but the sausage will be dryer 👍

    nice but it's not really turkey (one kind of meat) if you mix it up with other animal, hate it when they mix venison and pork for sausages and i only want to try out venison separately, if i want pork it's easy to get pure 100% pork without any other random meat added

    If you used turkey thighs, you wouldn't need as much pork fat.
