Please take the time to watch this video and remember to like, share and subscribe. Turkey sausage is one of my favorites to make. When you add jalapeno and cilantro to the mix it only gets better. This is a simple how to video with great results. If you do not have a grinder or stuffer, pick up some ground turkey at your local meat market and make some great turkey sausage patties. If you are cutting back on the pork this a great substitute for Mexican Chorizo. So break out the grinder and stuffer and learn how to make turkey sausage with jalapeno and cilantro.

Love to see those kiddos learning how to make sausage! I was browsing through your Amazon store and noticed you have a nice selection of books on cooking and barbecue. Have you ever read "Wicked Good Barbecue: Fearless Recipes From Two Damn Yankees Who have Won the Biggest, Baddest BBQ Competition in the World"? For those who are getting into competition barbecue I highly recommend this book. I've bought dozens of books on competition barbecue and the majority of the recipes in those books are just not that good (in my opinion). This book has recipes that are excellent! It also has some really in depth recipes that will challenge most experienced cooks. I highly recommend it.

Good deal Joey. Just remember if you are cold smoking and not cooking you have to add pink salt or some other preserving agent to prevent bacteria growth. The recipe I have posted is a fresh sausage so no preservatives were added. Thanks for watching and for the comment.

Chef Johnny that sausage looks awesome! How would you finish the cooking. Is this to be smoked now , and at what smoking temp. And what finished internal temp?

Deer Slayer this is a fresh sausage so any cooking method is ok. I think grilling this would work excellently. It would substitute nicely for chorizo in any Mexican dish that calls for it. If you wanted to smoke it then pink salt or some other preservatives would need to be used. Now I don’t mean cooking on a smoker I am talking about a cold smoke. If going on the smoker to cook then throw it in and cook it to 165 degrees. Just like any poultry product. I run my smoker at 275 so I figure 30-45 minutes. Using it like chorizo you might take it out of the casing and fry it up once cooked through add some scrambled eggs. It will make great tacos. Thanks for watching and for the comment

Rene it totally depends on the cooking method. Have a playlist of sausage cooking and you can cook different ways. Officially after something is cooked you have a seven day life in the refrigerator
