    Thanks for the video brother. I smoked one last year using my own homemade thrown together brine. Came here to get other ideas and opinions. Looks great! Akron grills rock!

    I used two Weber Char-Baskets, one on each side of the charcoal area, then put a Weber grill where the three supports are for the deflecting stone. Centered on top of the Weber grill, I placed a small roasting pan to catch the drippings for gravy and put the Akorn grill and bird on top. This way I didn't need a deflector because the roasting plan gave it perfect indirect heat and I got all the drippings. I brined for 20 hours and injected with 3 cups of a mixture of pineapple juice (a neutral citrus), chicken stock, melted butter, salt, pepper, thyme and rosemary. Best Turkey we've ever had!

    What temp were you aiming the akorn to hit? 300?

    That brine is my exact recipe for smoked salmon, including the apple. I grew up in northern Michigan and we smoked 200 pounds of salmon at a time in an old converted dry ice freezer. Now it's time to try this on a turkey in my Yoder YS640.

    love this and can't wait to cook. A few questions I didn't see answered if you could do so: 1. How long and at what temp should I cook the turkey (15-22lb)? 2. Will I need to add coals as it cooks? Thanks in advance!

    Temp depends on how long you plan to cook it. Go off of internal temps to be safe. I did one at 250-275 for roughly 5 hours, 15lb. Went a tad faster than I anticipated.

    I’ve just bought a char griller acorn, it is the portable. Will a 15lb turkey fit in one easily? Can I ramp up the heat without removing everything off the top? Thank you.

    That's a diffuser - keeps the charcoal temperature from going directly to the bird - kinda softens the heat and directs the smoke around. I do a similar thing, but I couldn't get that part . . . the charcoal grate from a Weber Grill is exactly the right size to sit on that ledge - I wrap it about 90% in foil, and it diffuses really nicely. Good smoking!

    Possibly. I just used mine to smoke a 15lb one today with room to spare. 5 hours to get it to 165 in the breast at 250-275.
