    For an awesome pork sandwich experience, I like to cut the Pork Belly in to two separate pieces. Use different dry rubs on both. Smoke them together, pull one out around 190 and pull the other out around 205. The 190 pork belly will make amazing slices, the 205 pork belly will be pulled and sauced, and then placed on to of the slice pork belly. Put on some pickles and grilled onions, BAM! Great video!

    Cheers to ya Mark!!!! I appreciate the kind words brother. I love helping others learn how to cook stuff and I also learn along the way. On this cook, I learned that I really need to put a grill grate probe near the meat so I know what the actual temp is where the meat is cooking instead of going by the Weber thermometer. Live and learn!!! The belly still turned out fantastic regardless of how long it took to cook. LOL

    Pork belly is just the most versatile cut of meat. Rolled as a Sunday roast, slow roasted and pressed for fine dining, BACON, porchetta, minced for the best sausages... you've done it proud there T-Roy. All the best from Wimbledon, SW19

    @T-ROY COOKS hello again sir..can you please do a video about pork belly with crackling skin..watched a bunch of videos and tried to replicate a high heat start on the offset smoker about 450 to 500...for 1.5 hours down to 250 for a 5 hour finish ...pork itself turned out amazing but the skin stayed soft and had to broil it to achieve crispy skin after ..I did a 24 hour rock salt top to the skin after a brush with vinegar and scoring the skin ...wondering if its near impossible to achieve on the smoker ...I did however leave the belly whole at about 10 pounds ...maybe I should have made into more of a couple 5 pound pieces ...you are the man! keep it up

    How I wish this video would have been posted just a few days ago. Mercy had a Pork belly in the fridge, and I didn't mind that she cooked it in a skillet on the stove... On the STOVE! Now I'm kickin' myself for not suggesting we cook it out on a Weber. It was just one of those things, I guess. GREAT video, T-Roy. If I ever get my car out of the shop, a Pork Belly will be on the agenda out here!!!

    Fantastic cook Troy, I have that slow and sear and it is a beast, love using it for long cooks on the Weber. Man I just bought a pork belly to do a video, but when I saw you had plan to do one, I just threw mine in the freezer, guess I will wait to do mine later......lol.     I'd never done pork belly either Jason. It was a fun cook and the smell was unbelievable. I will be using a grill grate probe next time so I can tell what the actual temp is where the meat is. You are going to love that Slow "n Sear. It will easily do 12 hrs low & slow. Cheers to ya brother!!!

    Man! so glad you did this video, so glad you used the slow n sear. so you cooked it all the way down. I have seen it cooked to a point where you can slice it like a brisket also looks good that way for sandwiches. Cant wait for the burnt-ends. cheers to you..

    Yes, I cooked it just like a pork butt. I thought about cooking it to 170F or so to slice it, but I wanted it to be succulent and juicy. Man, it was some mighty fine eating!!! I appreciate you watching Austin. Cheers brother!

    haha niiiiiice to see u finally got a kettle buddy!!! rock on!! i asked about how temperature can be reduced in a kettle about a month ago. Not easy task eh? haha I just got back from my RV honey moon to Quebec City with my new wife and ofcourse... i brought my kettle!! man, these kettles are so versatile!! Made some sausage, steaks and even low and slow beef ribs!! Just set and forget while i went site seeing!! Why eat out?? (we did a few nights tho lol)hope to see more vids on the kettle!

    Hey T-ROY, I have the slow 'N sear also. I have found the temp that the lid thermometer reads is way different than what you are actually getting at the grate, its a lot lower at the grate. That may be part of the reason it took so long. I've been running remote probes with mine. But I love my slow 'N sear.     Hey Michael, I appreciate the advice on using a grill grate thermometer. I do believe that was my problem and why it took so long to cook that belly.     Dang that looked wonderful!! I did a Pork belly it came out so bad (Very Dry and rubbery and tasted like ham) The video I shot was never put together. Now you got me wanting to try again!!! Dang that looked good!! I think I may have a pork week!! Already got some Pork chops (gonna do in the Sous Vide) Jonesing for some Pit barrel Cooker Ribs and now gotta try another pork belly!!     That's some fine eatin' right there! I like to do pork belly burnt ends with mine too. I couldn't help but laugh when you take the lid off the grill or mention tasting the dog magically appears into the camera LOL.

    Porkbelly is good eating brother..Got a whole ribside in my freezer so now i have a plan of what to do with it.. Been looking to buy that slow n sear.. looks like a nice thing to have.. The result looks really good.. Fantastic.. Cheers brother!

    Hey brother Kjetil, I was truly amazed at how well the Slow 'N Sear worked and how long the charcoal lasted in it. I could have easily gone for 12 hrs without needing to add more charcoal. Get ya one!!! It's T-Roy approved!!! Have a wonderful week my friend. Cheers to ya brother!!!

    I use two bricks to make my own "slow n sear" doing some spare ribs right now. I've other cookers but my Weber gets the most use. Prob made 100 butts on her. Love it

    Nice cook T-Roy... good color and bark! Wasn't sure what you were going to do with the belly, but pulling it worked! I recommend the drip pan as an addition to the S'N S. Thanks : )

    I need more pork belly in my life! That looked awesome Troy, I love the Heaven Made rubs. I recently found Kingsford's longer burning charcoal at HEB, you might want to check it out for these long cooks.

    Is the grate supposed to wobble alittle bit once the slow n sear is in there? It doesn't sit flush like before

    Happy Retirement T-Roy! I love your videos; I just wish I was half as skilled at cooking as you are, lol. Enaam wants me to tell you hello for her as well, and that she misses you and that things aren't the same without you there! :) I have a question for you: we just moved to Missouri a couple months ago, and are running into disappointment with the local meat selection. Do you have any advice on how to find a good butcher shop in a new-to-you area?

    Hey there, thank you very much! I am still getting used to not being on call 24/7. LOL Please tell Enaam hello and I miss her as well. She's such a sweetheart!!! As for meat, I know that Costco has good meat, so if you have one in your area, you may want to check it out. You may also be able to find a butcher shop in a local small town or city that sources their meat from a local rancher and they may have good meat. If all else fails, there are meat purveyors online that will ship you meat. All my best to you guys!!! Cheers, Troy

    I'm making one tonight, for tomorrow. THANKSGIVING! Whole sucker too like 11lbs. No wrapping nothing like that its gonna go as long as the brisket. Using a 18.5 wsm. Bricks in the water pan. If someone replies I will update this when the cook is done. Got a prime brisket too... only thing I'm not sure about is which one will be on top and which one will be on the bottom ????

    Hey Jim, I love the Slow 'N Sear. I can't believe how long the charcoal lasted. I could have easily done a 12 hr cook without reloading charcoal. Hope you are doing well brother!!!
