    WILD FORK is where i get all my meat. Love hanger steak. I usually cook mine 8 minutes over fire. It's a little redder but tastes amazing

    Troy, you never disappoint! Hanger steak tends to be a little tougher than Skirt steak, but the way you cooked it and that chimichurri sauce I’m sure it turned out nice and tender. Skirt steak is kind of like that. I’ve done skirt steak on my grill before. I’ve also done skirt steak on my Blackstone when making Carne Asada fries. Thanks for sharing!     Bestest hanger steaks I ever had were in Lille, France and Anthony Bourdain's place in Manhattan. Both with "frites". I loved the foie gras on toast in Lille for a starter...pure bliss...

    I have tried Hanger steak but it's hard to get here in Australia unless you go to a butcher who understands American cuts. I understand that the Hanger steak comes off near the Rump somewhere and that cattle only have 1 each....well that's what i've been told anyway.....I do prefer the Tri-tip steak and I cook it exactly like you did here, using American F temp guide, I go indirect to 120F then take it off for about 20 minutes while i bring the heat up on the Weber then I reverse sear till around 140F, has never disappointed. Great to see you back cooking in the backyard T-Roy.....love your videos!!

    I watched you smoke a Chuck roast on a WSM, so I decided I needed one. Then I watched you grill a steak on the bottom section of a WSM, so I did that. Now I want a full size Weber kettle ‘cuz I loved the flavor so much! You’re tough on my wallet, man! 😂

    I’ve been using Wild Fork for all my Ribeye Steaks & Picanha for over 4 years ✅ & Wild Caught Gulf Shrimp. Delivery is usually Free & only 2 days 👍. I think just a Hot Sear would product a Better Hanger It looks like you over cooked it. And side dishes are very important. A Classic French Presentation for Hanger Steak is Crispy French Fries & Creamed Spinach ✅ and The Chimichurri is also A Must ❤️. Cheers 🍻 from Los Angeles at MickCotton BBQ on KZread 😊

    We call this by the French name, onglet here in Scotland and I wish it was easier to find! Such a beautiful cut. Bavette or flank is available in some supermarkets and it's almost as good, if not quite as tender. Great video!

    that's some fine eatin T Roy! the chimichurri was a nice touch at the end. those hangers are hard to come by but now that a wild fork store opened up near me, I should make a meat trip down there soon.

    Troy, you are correct about the gristle that runs down between the two sections of hanger steaks. Not to rub it in but my local HEB also cuts a hanger steak opposite to a hanger cut and packages them as top blade steaks for $6.69/lb. The problem is the gristle runs right down the middle of the steak. So, you must remove the gristle before grilling or just eat around it. I choose to eat around it since the blade steaks are fairly small and thin. However, unless you over grill them, they are flavorful and tender. You mentioned that you have tried other cuts from Wild Fork and they were good. What other cuts have you tried?

    I can’t answer for Troy, but I’ve done a prime brisket and Dino ribs from them in my WSM, and both were fantastic. Definitely recommend.

    I get hangar from local butcher in Omaha for 9.99/lb and Teres Major same. the former has more tendon and silver skin. I'm not a butcher so I just get off some of the silverskin and try to get the tendon out of the middle. But for the most part hangar and terres major have more beef flavor than tenderloin, not that I don't love tenderloin. but these are way cheaper. i just get as much tendonous stuff off the hangar and slice steaks against the grain. If I get some unchewable stuff I just go wilderness cave man rip the meet off and throw away the unchewable. These two steaks don't need much seasoning at all if you want the pure flavor of beef. I'm not eating this at a fine restaurant. I'm ripping and tearing rare beef with my cave man teeth we still have. I got no problems putting my fingers on a piece of this beef and tearing it up like a bald eagle. Tenderloin is OK but these are primal beef if you are willling to get down on a piece of a cow from the best parts. And good price. I don't buy ribeye, porterhouse, or any of that stuff anymore.     Once again, a video that includes dogs that you don't bother to introduce us to. Are they your wife's dogs? Do you give a sh1t about them at all? Compare and contrast to you versus Kent Rollins and how he brings his dogs into our experience. I mean, I liked the basic lesson. Hanger steak is probably my very favorite cut of mean. But what about your dogs?
