My mum shows me her amazing recipe and techniques for cooking the best SG Chicken Curry (新加坡式咖喱鸡).
Auntie Ah Choon is a self taught chef who for about 20+ years ran a successful Economy Rice Restaurant, Restoran Jia Ling in Skudai, Johor. With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement. She has spent time a great portion of her life cooking in both Singapore and Johor Bahru, Malaysia. Ask any of her former customers, they'll happily testify just how amazing her food is and how efficient she is when it comes to being in the kitchen.

Yes, curry must have potatoes. My uncle made this style of chicken curry in 1974, the year my grandfather’s wakes. I have never forgotten the memories and the taste.

Thanks.i remember Dorothy Ng her book i bought in the 90s.thanks for bringing in authentic nonya cooking of the old. Evaporated milk is unique i will try.maggi brand a lot in her book.my endeavor with Singapore nonya cooking failed im not able to sustain it.its difficult to find ingredients.i have to acclimace spelling? Myself with Malaysian curry.im at home with madras curry which is popular here the yellow color.anyway i will try this recipe.

In HONGKONG, authentic Singapore curry is disappearing, I get very annoyed because I used to eat Singapore style curry beef brisket when I was young, now nobody makes it right and always disappointing, after this video I know I don’t have to look around, I just add lots of chilli coconut milk and lemon grass and be my own cook, thanks 🙏

Steam the potatoes in an electric auto steamer for 20 to 25 minutes. The curry dosh no need to cook so long. Don't put too much coconut milk or evaporated milk. The original curry soup outlook will became murky not clear.

Santan kotak ada ubat pengawit.. Sudah campur Cream 20 per cent.. Kurang wanggi dan harum.. Ingat nya. ! Pelanggan You Tube. !

Jika Santan dan SuSu sudah lebih 400 gn, Bererti tecipi kamu sudah out. ! ( Untuk 4 paha Aya ) ok.
Kuah Curry ayam mula sudah cantik, Semasa kamu tsmbah SuSu dan Santan.. Kuah sudah jadi putih santan.. Tidak balance dengan cabai kisar kamu. Ok. ( Sudah kurang 2 sudu, serbuk cabai Chap BaBas ) .
Too much coconut milk becomes too creamy 😅
Recipi bagus, tetapi bahan yang kamu miss out.. Serai 1.batang kidar dan 1.untuk di tumis, Baeang besar 4 biji untuk di kisar, Belachen goteng 2.sudu untuk di tumis, Kayu manis 1.btg ,Bungah Rawang 2 kuntum, Bungah Chinkey 2.kuntum , Gula Malaka 2.sudu ,Masa tumis, minyak sudah kurang 3.spoon ,kering sangat.. 4 paha ayam,Santan segar 400.gm ,lihat kuah kamu sudah terlalu banyak Santan dan SuSu Carnation,, Chicken stock 1.spoon . ( Santan kotak ada ubat pengawit, dan kurang harum,,Gunakan Santan Segar. Ok.
Now Malaysian curry is called Singapore's curry. Just like INDIA talk. Like the Queen of England is from India. Or Jesus is from Southern India.....
