This shortbread recipe started off as me trying to recreate the popular Walkers shortbread, but after a some time I ended up changing it to suit my preferences and I hope you enjoy baking these too.
And as always, there are plenty of notes and tips in my blog post so do check it out for more details (link below) :)

230g cake flour (8.5% protein)
40g corn starch
180g unsalted butter (82% butterfat min. see notes above), soft
20g full cream milk
80g caster sugar
4-6g fine sea salt (see notes above on salt)

I made these and i can assure everyone that these turned out sooo amazing, tasted almost identical to scottish walkers shortbread. I’ve tried so many versions of shortbread recipes and these are as close to actual Scottish shortbread i think i can get with at home ingredients. 👏👏👏
I love Shortbread and over the years I came closer to the original ones from Scotland, so I'm thrilled by this one...waiting to see :)

The addition of milk is quite interesting! Normally all the shortbread recipes I come upon are 3 basic ingredients of butter, sugar, and cake flour. Some recipes I found also include cornstarch and vanilla extract, and I personally prefer the 2 additional items. Now I need to make your version to see how the addition of milk affects the shortbread! Thank you for sharing this recipe! It’s such a joy to have this recipe up just in time for Christmas snacking 😝

Usually no milk is added to most of the recipes and like you said, it is often just butter sugar and flour. But with the cornstarch in this I find that the milk just helps with getting rid of some of that powdery texture. The key is still to ensure that it's fully baked through though :) Hope you have fun baking this!

Looks good... I'm Scottish but moved to a different country, so I need to make them on my own along with scones which I miss too. I'm going to make some shortbread for xmas as usual - probably plain, almond, and citrus flavours! Try it with toasted nuts and/or citrus peel! I'm glad you added the pinch of salt btw, it's essential lol.

The pinch of salt is definitely needed :D I find it kinda bland without the salt if you are having it just as a straight up butter shortbread (unless you dress it up with nuts and chocolate). Citrus and almond sounds like lovely flavours, I always like the idea of having pistachios in my shortbread (if I end up adding nuts to it). :)

Perfection because of mixing the corn flour early and plain flour last.
Super simple recipe. I’m from the UK but live in Poland where I pay through the nose for a packet of Walker’s shortbread! Saving a fortune now! One thing though, why is my shortbread losing shape so much after baking? I make sure not to overwork the dough and always refrigerate overnight before baking.
There are 3 maybe 4 in Real scottish shortbread. Butter, sugar, flour and maybe some rice flour. Cream butter and sugar gradually add flour. Soft dough press into pan(s) bake, sprinkle with fine sugar and cut when warm into whatever way you want. I'm scottish so don't be telling me I dont know shortbread. During covid I sold my shortbread at my Church and raised $760 just me by myself, made it, bought Christmas boxes tied with ribbon and a Christmas decoration.

Can you prepare it without cornstarch
My Scottish Grandmother's recipe is by far the best. 4 cups flour 1 cup sugar 1 lb of butter Slow bake 250 for 50-60 minutes.

Hi, you can actually add the tea dust from those tea bags if you wish, I tend to not really love the texture of the tea grains in the shortbread when you are able to taste it, but the alternative is to blitz/grind it until it is really fine and add the tea powder to dough. You can swap out the tea dust for the flour at a 1:1 if it is really fine like flour texture, otherwise just add it straight to the dough.

Maybe steep an Earl Grey tea bag in warmed milk then remove the bag once steeped to your liking, cool and add it in in the milk step of the recipe? No granules that way!
Sorry, not Scottish style at all I am afraid, because Scottish shortbread only has 3 ingredients, flour, (salted) butter and sugar. No corn starch. If you cannot get salted butter you can of course use a pinch of salt. The proportions of flour, butter and sugar are really easy to remember, 3, 2, 1, so for example, 300, 200 and 100 grams each, or 150, 100 and 50 grams, for example, whatever quantity of shortbread you want to make. Also we try and keep the butter cold. I use a cheese grater to make fine cold butter shavings, and then add the sugar and flour and very gently mix it first then briefly knead it with cold hands. No resting in the fridge, bake them straight away. This produces a really nice and authentic texture and a superb snap.
I could have made a 3 course dinner for 10 in the time it took to make these and you don't add milk to shortbread 😅

I clicked on this recipe because it was titled "Simple Butter Shortbread, Scottish Style". Then I saw eight items in the ingredient list. I'm sure the recipe makes nice cookies but it's not simple, Scottish or shortbread. It is something else.
Why do you bang on the tray after baking, so I understand?

I just like to do it to knock any of the heat out of the shortbread, but not sure if that actually works. :) Just more of a habit from when baking cookies, because that definitely knocks the excess heat out of them and condenses the crumb.
You spoiled it by adding the milk and vanilla.
All shortbread is Scottish style. It's Scottish.
There is nothing simple about your recipe. Shortbread is the easiest product you can make that only requires three ingredients ( four if you want to ruin it with vanilla). It’s pure simplicity with exceptional taste and flavour. Your recipe may be fine but really, you can make things easy by just doing it right.
Folks, we all need to BAN these channels that move E-V-E-R S-O S-L-O-W-L-Y.......... and amplify the quiet sounds. This is mentally unhealthy in the extreme, I assure you. Either play them at double-speed with the sound completely off or don't play them at all.
Its a great recipe but it is not true Scottish shortbread.
