    Hello Sam, this is JIM been watching your videos. I enjoy and very much I’m 80 years old. I’m starting a sharpening business. I would like to call you often on if I could and happy with a mentor. In the meantime I got a workshop and I just purchased two Harbor freightone by 30s house also have an edge pro Apex. It's brought me so much joy and a bunch of awesome skills, and I hope it does the same for you! 😊 I'm actually planning to do a follow-up on the harbor freight 1x30. One of the best mods I've found is changing the spring because the stock one is super stiff! Also, I'm pretty familiar with the edge pro apex and have used it a lot in the past.     My pricing stays the same for knives and tools I sharpen. Be it me going to the person, or them dropping it off to me. I tried a minimum but that seemed to scare away more people. So how I go about it now is a call out fee based off distance to make sure I am still making a profit, even if I’m being called out for one knife or tool.

    My 2 cents on sharpening kitchen knives: A toothy edge cuts vegetables much better than a highly polished edge, try to cut a tree branch with a surgeon's scalpel. A highly polished edge cuts paper wonderfully but we don't eat paper salad or paper soup. I do sharpen my knives but also prepare my meals in the kitchen. 😮✌️

    Couldn’t agree more! Toothy edges are amazing! You can actually do some pretty impressive cuts with a toothy edge as well. May not be as smooth cutting paper. But 9/10 people are cutting things other than paper. 😂 highly polished is very pretty, but a toothy edge is functional! Still looks nice too.

    @@Samsmobilesharpening the idea of a highly polished edge comes from raw fish preparation by the fastidious Japanese chefs, for raw fish and meat a scalpel edge is perhaps adequate but not for everyday use in western kitchens. I have used knives with highly polished edges and didn't like it. Cheers, good videos.

    @@Samsmobilesharpening I used to sharpen my knives to perform the trick of push cutting standing folded magazine paper, I was very happy with my trick, but noticed that the performance of such edge wasn't that good for meal preparation. It actually felt more dull than a toothy edge. Do your tests in the kitchen, try different grits and methods, ask the person who prepares your meals which edge they like better.

    @@redangrybird7564 I think that’s half the fun! It’s amazing how many people just think knife sharpening is one way fits all. When in truth it’s like a haircut, or a style. The sharpening is unique to the person. That’s half the fun of the job. 😊
