I had a quick question and I hope I'm not prying too much by asking but I live in a real small town in idaho that could possibly benefit from a service like this and was curious if you charged on a per knife basis or if you do a flat fee for x amount of knives? Also is there a good price range for someone starting out to charge? It seems like it would be worthwhile to charge more for things like bread knives that have serrations since it'll be a bit more involved than running a flat edge knife but thats just my opinion. Again feel free to answer or not answer any part of my questions anything you are willing to share I'm thankful to hear. Thanks again for sharing your craft with us and imparting the knowledge you have picked up over the years sharpening. Aloha

My local farmers market has serious concerns to having people carrying knives longer than 4 inches. Local police chief says it breaks the concealed carry law for Wisconsin! Its friekking Wisconsin 60% are registered gun carry permitted! Maybe it's a blessing in disguise. Thanks for a nice video!

Cliff, I've purchased a 1 x 30 but have not tuned it yet. I've been reluctant since I power my stuff from a lithium power pack and I am concerned about draining it while sharpening since it draws more power than the Ken Onions I use. But after watching this video I believe that given the short time on each machine and the small total sharpening time the power station I have may do okay (620 Wh). I'll have to complete the basic rebuild on the 1 x 30 try it out.

I have come to the same conclusion two light swipes on either side is perfect to tune in a cutting edge. I use 600 grit DMT ( Diamond ) plates. There is an extremely small amount of material that need to be removed bring the edge back especially on a well thinned knife. Using 325 mesh for DMT for secondary bevel.

It looks like you are sharpening them all at the same angle. Is that what is happening? That would make things faster.

15° is a great area to sharpen at. You can go lower but risk certain steels and certain knives to chip or roll. Going with a larger angle for hard work knives is something I do by laying on the primary bevel instead of the flat.

Its one of the reasons I really enjoy sharing this information with all of you is it can be a great career move if you enjoy this kind of thing...but its not without risks of injury also.

Was always told by my grand father, never sharpen dry . Always use a liquid! I sharpen now in my retirement days , I use whetstone s . And I have repeat customers . My clients are around 200 that call all the time . My last customer I had sharpened for said she had this guy sharpen her knives and they filled quickly. I researched that guy and he used belts like you , he burned the metal with the belts

He obviously didn't know how to use the belts properly then. I use Tormek, Wicked edge and 1x30 for my commercial sharpening business. I've never burnt a knife using the 1x30 belt sander.

Interestingly, you can pick up snippets of knowledge on the fly by observation.

No matter how hard I try, I can't sharpen it that fast. and if it does, they quickly get dull

The concepts of the process is simple. If getting dull its not from the process but something not quite right in the progression you are doing. Fully deburring is critical.

@@CurryCustomCutlery I know. my reference book is the book of Dr. Kraichuk. on tormek I get razors. but on a belt grinder it does not work. even though I'm supervising the work under a x1600 microscope.

There are differences with belts if you are going edge leading or trailing and that determines how to do the most crucial step the final stropping.
