A lot of us grew up with seed oils. Did not know better. Consequences in my fifties. Now you see a new generation of knowledge against the processed garbage. What will the food industry do? Advantages of a free market to buy quality food. Thanks, Tara, for your insight!

A problem with claiming seed oils are dangerous or even pathogenic to any meaningful degree is backing it up with any quality research. It doesn't pan out in the scientific literature that processed vegetable oils are causative of any disease. Appraising the research is of course, only one angle of addressing this topic. But it is the prevailing framework at this time. I'm a low carber, whole foods enthusiast with a strong bias against seed oils. I think they are a disgusting, highly processed industrial product. I am also a health science graduate with a solid foundational education in health research methodology, epidemiology and biochemistry. As much as I suspect there could be a link between seed oils and disease, I can't in good faith claim it has been identified in the research. It may be one day, but not yet.
