A cork belt and your choice of compounds works a treat. Slower speed helps on this grabby method.

This is new! May I ask where you got the machine for the belts? The problem I have with my belt sander for wood is that they leave one side of it with about a half-inch of metal or hard plastic, and it isn't reversible, so that makes it not possible to do both sides of a knife all the way to the heel. On the sander set up you have there, it looks like you can go all the way to the heel on both sides without impediment. And a Q: do you not worry about heating up the blade?

So this belt is for polishing. It’s very thick. The machine had to be modified. You will take the side chassis off that is a protector. You actually have to cut part of the bottom of the machine off so the thick belt will work on it. Yes you have to worry about overheating when you’re doing the Grinding. I didn’t worry about it on this belt because of the nature of the belt. I’m sure if I pressed it for a long time with much tension. It could be a problem. You don’t need to press a lot because the nature of the belt will do the job. This can stand upright as well as lay down and then you can face on either side of it so it’s away or towards you. You cannot change the direction of the spin but you can work from tip to heal once you remove the otter chassis. It’s screws off and it’s very easy to do. It comes with all the tools you need inside the box. The only thing you’re gonna have to do is remove the back part of the bottom of the grinder. The big wheel on the inside does not have a lot of room for the thick belt to spend and therefore you’re gonna have to cut the back of it off to give it sliding room. It becomes very self evident once you see what I’m talking about.

Do these scotch brite belts work on matte finish knives or will the matte finish rub away to make it shine?

I've gotten something pretty damn polished with the finer belts, but it took me a while to realize how much you need to barely let it touch the metal because if you press hard you're gonna stay matte finish

Those are nice belts! How would you clean them? I have all 3 and getting gunked up.
