I really think the pilot knows that it's OK to start the airplane without that guy pointing at him and waving his arm constantly.

You are absolutely correct. The main reason he is giving the signal is to warn anyone walking on the ramp that the aircraft is starting up. There was a PT-19, SNJ, P-63, P-51, FG-1, B-24, B-25, B-29, wildcat, Casa-131, and other aircraft operating at that show. With all those planes pilots and ground crews working, this is one of the many safety procedures employed.
