    My ultimate comfort food...homemade buttermilk biscuits and sausage gravy with lots of fresh ground black pepper. Makes my southern DNA flutter and, my tummy rumble. My Grandma from Oklahoma taught me to make it when I was 3 years old. Yum!

    Hi kokonutbaby1, I think your asking about my stainless steel spatula with the straight edge. I searched everywhere for a straight edge one and could not find one so I gave up. Then one day I was in our local Family Dollar store and just happened to notice one in their cookware section. I bought 2 and they were only $1.00 each. What a find! It's been several years now and I don't know how I ever cooked without them. Hope you can find one. The spatulas work well on stainless steel pans.

    I left the south many years ago. This gravy with biscuits and scrambled eggs is a part of the south that never left me. This rainy northern day needs real soul food of this very kind, with cowboy coffee. You know, cowboy coffee and French press are the same thing. One just costs more.

    When I was young bacon was a staple, and folks had more grease than they could use. For a Girl Scout fund raiser we would go door to door and collect bacon grease to sell to a soap company. (I'm from So. Cal). Thanks for the yummy recipes, Phyllis!

    Hi Phyllis; you cook like I do. On sausage, have you checked the pre-cooked 2 oz patties from Aldi's or WalMart, costs about the same as bulk sausage by the pound and saves you a bunch of time.

    Seeing as how you're pretty careful about adding salt to things, I found it interesting that you added salt to the bacon grease/flour mixture. Is there not enough salt in the bacon grease?

  • @PhyllisStokes

    @PhyllisStokes

    This video was made in October of 2013, we were not watching our salt intake back then. I would probably still add a little salt and no I do not think the bacon grease would have enough salt.

    When i make sausage gravy all i do is after i cook the sausage i just add 2 cans of cream of mushroom soup and a little splash of milk. And once the soup is hot the sausage gravy is done.

    Excuse this long post. Question/observation. I don't think I would be able to cook this way. A number of reasons. For sure I would never remember to take the bisquits out ahead of time. You all tell me if what I'm thinking is wrong. So. The sausage was previously cooked and frozen. It's mixed here in the gravy. (Here's the part I'm skiddish on). The sausage gets re-frozen a second time. To me that's a huge 'no-no' . Seems like when you defrost food that you should be using it all. If you don't eat it all, it goes to the trash. It doesn't get re-frozen again. Although, I'm not sure if this is how a fast food restaurant would do it. But no. Even fast food gets pre- cooked, frozen, and when defrosted gets used. This is saving money which is great but it just seems overbored to do it twice. I'm by no means making fun of Ms. Phyllis and I'm no expert. This is why I'm asking you all... In the comments. Doesn't it seem like it may even be unhealthy. What do you think?

    Miss Phyllis is the queen of the freezer and cooks most things, like bacon, in larger quantities and freezes it. Mind you that was about a cup of bacon fat, not a half gallon. About the amount you'd get from 2 lbs of good bacon. Good fresh bacon, truly good fresh bacon, will produce more fat than the crummy name brand store stuff. Little bits of cooked bacon are used in many recipes. Perhaps think a little more before you exaggerate the next time.
