Savory Oats 3 Ways: Risotto, Chili, and Curry (vegan + gluten free + oil free + sugar free + salt free)
You guys! I am obsessed with these oats. I have created three fast and easy savory oat recipes that will satisfy your hunger morning, noon, or night. They are packed with healthy whole grains and greens, and they don’t skimp on flavor. This is my first experiment with S.O.S. (Salt. Oil. Sugar. )free cooking, and I think I’ve nailed it.     Thank you. Savory overnight oats are a great idea! I think that any of these could be turned into overnight oats with the use of rolled oats instead of steel cut, and a 2 parts liquid to 1 part oats ratio. I might have to give it a try.

    I suggest adding 1Tbsp cocoa powder to the chili. It gives that secretive adobo umami thang. I bet these all would also be great with quinoa.

    1 tablespoon sounds like a lot... But I've added cocoa powder to my chili before and have noticed the depth of flavor, so I get where you're coming from. Let me know how it goes.

    It was a cool change of pace. I don't think I'm a salt free person at this point, but I find myself cooking with a lot less oil (in general), and overall, I'm trying to just eat more whole foods. Thanks for watching and taking the time to comment!

    Mushroom oats my way 😅:- Heat water. Soak the oats in hot water. Start preparing the mushrooms. Tiny bit of oil (1tsp) Chopped onion Garlic and ginger paste tomato sauce/puree Mushroom Cook until mushroom is soft. Add the oats. Mix it in, cook a bit. Add more water if you want. Done ✅

    I've been loving getting creative with my oats. I'm going through an ulcer and can't have a lot of spice, acid, or fat and oatmeal has been a great base to work with.

    I think oats are often overlooked. People just think about sweet breakfast porridge, and that's about it. But oats are great, and as you mentioned, are a great base for so many other flavors.

    💯% *RECOMMEND THE CHILI* I made it and it was delicious. I didn’t have things like the *black beans* , and *leafy greens*, and *veg stock* . I ended up using chicken stock tho still turned out great!! Would definitely do it again 🖤

    Omg I just made the curry oatmeal and it is so delicious. I recommend adding a little bit of cumin powder because it works super well with the curry powder. That’s what I did and it tastes so good! I definitely recommend this recipe

    These are really good. I also try to cook without salt or sugar, and as little oil as possible. All so very healthy and great for anybody doing quarantine in these days as all are cooked in one pan. Made the risotto and curry ones so far with couple of changes. For the risotto I added some dried oregano to the mushrooms to bring up their flavour, went with smoked paprika instead of the yeast and also threw in some strands of saffron but if too expensive for you, you could leave it out. For the curry I grated in a medium tomato instead of using the paste (I did saute the onion with the tomato first so the tomato was reduced a little to like a paste) and used cumin and a little ground cloves instead of the yeast, this gives it a great middle eastern flavour. Another tip for those who don't like the acidity of adding lemon or lime juice, just zest some peel in at the start, gives that a subtle citrus zing without the acidity. Thanks for the recipes!

    I’ll give these a try. I like the idea of partially cooking to al dente texture. These look like great side dishes to bring to a party/potluck where everyone isn’t vegan to show what can be done.

    I will say. I may not an actual vegan or vegetarian but after seeing these recipes I'm tempted to try them as I'm looking to get into a more healthier lifestyle after a recent health scare. At the time of this post I've cut out all soda and tea. Making the next move is gonna be tough but my health comes first.

    Classic Virgo... For most of my "adult" life, I've received cookware for birthdays and holidays. This saucepan was a gift from my mom at least a decade ago. It's Le Creuset, in the color "lemongrass". They swap colors each season, but they always have one similar to this one. Thanks for watching!

    Love this. I would saute the onions, garlic and definitely the tomato paste. This is the way I cook, in water or broth, using lime or lemon instead of salt. I love your ideas will definitely try them.

    Sauteing the onion and tomato paste with the curry powder definitely deepens the flavor. I wanted to show how quick and easy it could be, but if you have the time, then you definitely need to be giving those aromatics some more love in the beginning. I still use oil, but more and more I choose to omit if from the recipe if I don't see any major structural reason for it. It's never missed. Thanks for watching and taking the time to comment.

    Thank you so much, l really like your savory recipes. I can cook for my dinner because it is recommended we eat oats at night because it will help us sleep better. Best of all no salt as my cooking uses no salt. Moreover your cooking is so simple, all cooked in one pot. 😋

    Just wanted to let you know that I tried the curry oats, and they were fantastic! I have tried to make savory oats before, but they had always come out way too bland, unlike these which were packed with flavor! Also glad these didn't require any excess broth, coconut milk, or sugar to add flavor. I had to make some modifications mainly to suite what I had on hand, so here's what I did that also came out great. 1. I added the onions and the garlic together with just a tiny bit of olive oil to sauté until fragrant then added the oats to toast in the flavor a few minutes before adding the other ingredients. 2. I added a pinch of kosher salt to bring out the flavors a little more. 3. I didn't have tomato paste, so I added a super thick spicy natural hot sauce I had on hand which added some kick and savory thickness. On the same note I subbed the curry powder for turmeric and black pepper and still had a great turnout. 4. Personal preference because I'm not vegan I swapped the chickpeas for shredded chicken which was wonderful. Overall these blew me away by how much flavor could be packed into oatmeal!

    Spices :- garlic powder, onion powder, Italian seasoning, red pepper flakes. So Indian folks can use the onion garlic powder from stores and those sachets of seasoning you get from Domino's.

    Good luck on your journey. I've struggled with high cholesterol for a while now. I'm trying my best to avoid any cholesterol medication as well. So far so good. I do need to watch my vegan junk food intake, though... Thanks for watching.

    hi Yolanda! I don't know if you're still working on lowering your cholesterol, but if you are (and even if you aren't) ginger has many health benefits and one of them is lowering cholesterol! You can infuse ginger in your water, you can steep tea of it, you can add it to cooking to boost the kick and you can even swallow a piece whole in the morning if you dislike the flavour. A coworker of mine is struggling with her cholesterol and she said a slice about the size of a coin per day managed to get her off her medication and back on a healthy cholesterol level! I hope you try it, good health to you!!!

    Thanks for watching! They would all be delicious with quinoa, but you're going to have to play around with the water rations and cook time. I don't think this 10 minute method would work well, but then again, I've never tried. Let me know how it goes!

    Wow - synchronicity! I just made some savory oats because I was tired of eating plain/sweet. I did a smoked paprika and sweet pepper version which was... okay.     LOL Indeed. :D I think my next plan (rough idea?) was to do something with soy sauce. A bit of carrot, some celery, fresh ginger, maybe some oyster or shiitake mushrooms. I've been on an Asian-inspired kick of late. I will let you know how it goes.

    Little too elaborate for my simpleton tastes. I just throw things in a bowl that I like. Steel cut oats, bush's vegetarian baked beans, some left over boiled new potatoes that I dry roasted in a pan to reheat, and some frozen spinach. I just mix it up and eat. I have some mushrooms in the fridge though, I'll give the mushroom recipe a try.

    Looks really good!! I read somewhere that lemon juice gets bitter if you add it while cooking. So you're on the right track adding it when the heat's turned off.

    Thank you. Cooking also tends to dull flavors (especially lemon and salt), so adding them at the end helps to make sure those flavors are perceived in the final dish.

    I have to get my cholesterol down so no more sausage egg cheese sandwiches for breakfast....I was dreading the idea of eating sweet oatmeal because I can't stand sweet foods in the morning so I am glad there are savory oatmeal recipes out there.

    I'm happy that you decided to make the change for your health! Savory oats are the way to go. These are salt free, so if you can have salt, I do recommend adding a bit of salt or a bit of soy sauce to increase the flavor.

    Trying to lose a to of weight + increase my fiber intake so these recipes are a god gift. Thanks much! Rolled oats (not quick/instant) work the same?     Rolled oats will require a much shorter cooking time, and a slightly different water to oat ratio. You could essentially do the same flavor profiles, but cook the rolled oats in the same way you would to make oat porridge.
