Sauerkraut Russian Style in The Jar! Капуста, квашеная в банке!

In Russian Style Sauerkraut carrots are used and some times even apples. It is very popular appetizer in Russia and served usually with boiled potatoes and meat dishes.
Ingredients:
1 medium head of white cabbage
2 medium carrots
3 tablespoons of coarse salt
2 table spoons of sugar
filtered water
2.5 L jar with wide opening
Method:
Slice cabbage in long thin strips.
Same goes for carrots.
Mix it.Put it in a jar.
Top it with filtered water.
Place jar on a plate , cover loosely with a lid and leave on a counter top .
Next day, mix cabbage and push it down with chopstick, leave it for one more day.
Final day: Taste your sauerkraut. If you like the taste, put it in a fridge overnight. If it is not sour enough, leave it for one more day.
Serve sauerkraut cold with anise seeds and a drizzle of unfiltered sunflower oil.

    That swan dish is unusual and festive on the table. It looks handcrafted. I was married to a Russian and he would make a delicious sauerkraut but his version had a hot spice in it. He said it was a family secret recipe so I'm not sure what all went in it but I know cabbage, carrots, salt and sugar were in it. I think he may have added chili flakes but I'm not sure. I like your idea of barberries but here in the US the closest we have are cranberries which are very similar. I think I will try your version and find a pretty bowl to put it in.

    If you keep it in the fridge after fully fermented it has a long shelf life. Mine is sitting in the fridge for over a month and still good. Thank you for commenting 😊
