You can replace with double/ thickened cream. Today, just tried without curry leaves, it already tasted amazing!

Wow Ah Pa the thanks for sharing the recipe! Alternatively you can bake the prawn and make the sauce separately! But I know anything cooked in the oil is more flavourful !

Thanks for the suggestion. We can't get mud Crabs here unfortunately. But I can try when I next visit London. However it is not possible at the moment. Thank you. Your recipes are really great. Cooking Ah Pa, just trying to ask don't you have to add some water to dilute the evaporated milk. I have tried to cook it and I think the gravy is too thick???
