Rare 19th Century Hog Splitter restoration.
The rust caused deep craters on the metal surface, couldn't remove them completely, that would cause no much material left.
I used a special Bald Eagle shaped rivets for the oak wood Handle to make it a little bit more characteristic.

In case you want to know, this Cleaver specifically designed as a pig cutter. It's used in slaughterhouses or in wholesale butchers where they cut the pig carcass in half while it's hanging. Also could be used for splitting off pieces of other animals that are hanging on meat hooks, but I've always known this size Cleaver as a a hog splitter.

But that was before modern power tools like the band saws that most meat packing plants and butcher shops have now.

Do you really know what you have there dude ? It’s a old Japanese tuna cutting blade. Wish you hadn’t have broken the wood on the handle. Don’t know how much you paid for it or where you got it from but you got a really great find. What website did you find this on dude. I’d love to take a look. Hold on to it and do some research about old Japanese tuna chopping blades or axes. Not sure what they call it over there these days but most Japanese tuna houses uses a samurai sword 🗡 for cutting up large tuna.

I'm not sure if it's Japanese I bought it from a British farm in England. Actually I found it on Facebook marketplace. The gentleman was kind and posted it to me.

I’ve seen a video on a Japanese fish market that deals only in blue fin tuna and they where using a blade just like this to cut steaks from the tuna since it has a thick backbone. I’ve seen a few more Japanese shows where they collect bamboo for furniture and flutes and they used this same blade. I don’t know who was the first peoples to build this but if it was my guess I’d pick Japan or maybe a country like Vietnam. A good heavy blade for harvesting rice years and years ago. I’ll try to run this blade down to see who really made it.

Called "Hog splitter" here in America and one this size sells for 350 to 600 $ or more (depending on condition). I collect them but i never restore them !! I have restored two, smaller 14 inch blade cleavers for the kitchen.

@@shanghunter7697 I went to a private butchers museum in Milton, a small town in New Zealand.He had a collection of cleavers like this that were used on beef carcasses.He even had a brand new made in Germany.I think it cost close to $1000
