Roasted Pepper Beef JOLLOF Rice 🔥
Jollof Rice Ingredients:
3 Cups basmati rice
1/2 Cup Olive Oil
3 Tbsp Tomato paste
3 Cups beef stock
2 Tsp Curry Powder
2 Tsp Thyme
6 cloves Garlic
2 bay leaves
Salt to taste
1 Onion Medium-sized(sliced)
2 tsp smoked paprika
11/2 Tbsp Seasoning powder
black pepper to taste
For the sauce:
2 Red Bell Pepper
2 Tomatoes Plum
1 Scotch bonnet
1 Onion
6 cloves garlic
2-inch ginger
For the beef
1.5 lb beef
1 tsp curry
2 bay leaves
2 tsp rosemary
1 minced habanero
2 tsp seasoning powder
1 small Onion diced
salt and black pepper to taste

Hello Chef Lola- just subscribed to your channel. Thanks for your recipes. How many cups rice did you use and is the rice pre-boiled or just washed prior to adding it to the pot? Thinking of making ‘‘tis for my wife this weekend

If you want to prevent Basmati rice from been soggy, don't soak it before cooking and always play with the water by adding it in bits then try to stir it little

Hi there. Can you roast the peppers from a frozen state, or do they need to be fresh?

Yes, you can roast frozen ones but allow them thaw well before roasting because they will have too much water content in them in their frozen state and they will turn out boiled and not roasted with too much water.
Chef Lola, what is seasoned powder? I've cooked jollof rice a few times but always wonder if I'm missing something because I don't have seasoned powder or all-purpose seasoning which is common in all recipes I've come across on youtube.

Its chicken stock powder. There's a brand called Jumbo, with a yellow container and red writing, that sells in bulk. You can find it at any market store.

Habanero/scotch bonnet works best for this recipe but if you are finding it hard to get, you can use red chili pepper.

No it’s raw rice. Just rinsed in water.

This was great! I just made it and it tastes great but got mushy. Anyone have tips? At first, the rice was a bit undercooked so I added a bit more broth and put it back on low heat and then it got mushy :(

Misty d When it was initially a bit undercooked, just turn off the stove and let the rice stand for 10-15mins. The steam from the covered rice pot would make it soften and still give you perfect lone rice grains.

It's just normal chicken seasoning but instead of cubes it's powder,
I have tried this kind of jollof with jasmine rice and turn out delicious but the rice in 🙄pieces

Yes this method is really good. If you want it to turn out with the individual grain well separated, you need to steam not boil. Immediately after the rice comes to a boil, turn it down to low and leave to steam. You will be surprised with the outcome 😊
