The marrow bones are roasted till they are unctuous and meltingly tender, then served on toast with a super fresh and clean salad,which cuts through the richness of this decadent dish

    My mam would always throw a marrowbone in a beef stew while it was cooking it makes the gravy really rich. Pissed the dog off too when he got the bone with no marrow lol

    Scott my dog got ill with neck muscle and joint pain , then an old man said get her some bone marrow Eventually I got some , in a short time she was 100% back to her best ! 🤷🏼‍♂️👏🏻

    My grandma used to take all the bits and pieces left on the pig bones and carcass and mix it with flower and make a loaf out of it. Then a day later she would slice it thin and fry it in a pan with lard. Pretty tasty, even as a young child. She used to call it "pawnhaus". I think it is an old German dish or something. Thx for the video. I will have to give this a go. Cheers

    I love me some beef butter. When my grandma makes caldo with beef shanks, the first thing I do is scoop out that one little (but satisfying) spoonful of beef butter and everything feels right. It's just that good.

    You got this one nailed. I opened with this in Australia for winter with a smashing result. You do need something to cut through the fatty tongue effect, try sumac and smokey paprika for a twist.

    A delicacy where I live is to bake bison marrow and spread it on toast. It's called prairie butter.

    wow Scott - I'm headed to the oral surgeon in a few days to get a whole lot of rotten old teeth out. Tell you what though, during these days of not being able to eat properly I've been LOVING your videos - they remind me of how I'm going to eat like a beast once my teeth are all better again in a few weeks time!

    Had bone marrow with toast at a hotel in South Africa (we often visit on holidays as it's close to Angola where we live) and it was the best damn thing I've ever tasted. It's like butter with a amazing pork-fat taste that spreads much easier.

    God what I would give to have a real butcher close here in Florida . They sell round marrow bones for soup but rarely long ones . DIRTY IS PERFECT WORDING for how it feels . Animals cant be wrong for working so hard to get to it . Will try the salad as sometimes it gets too rich . Great vid

    I wish this was more available in restaurants since I've loved it every time I've had it. It's a bit of work for something that I'd be the only one in the house to eat though. Perhaps I'll just suck it up and make it for myself anyway.

    There's always a way to enjoy it at home- get a section of marrowbone cut accross (in my country butchers sell them dirt cheap just for that purpose) and throw it in the pot when cooking beef broth. When the broth is done, all you need is a pinch of salt and a slice of bread. HTH

    I have been asking around butcher shops for marrow bones since 2011 and I'm always met with the same "ufo landed in my backyard" sort of look from them. So frustrating:(. I assume you are a butcher Scott and i pay my respects to your awesome craft and doing it the right way! :D

    Bone marrow is amazing. Scott, i recommend stewing whole uncut pieces, but able to access the centre, of bone with curry spices. I am an asian man and every asian lady cooks lamb/sheep/beef on the bone and off it, but will always have multiple 1 inch chucks of the bone in their curries. Good this is it doesnt melt away, it gets a seal and stays gelatinous. Even at 19 i call them 'hole goos(meat in my language)' and have been since i was 5

    i have tried this but the marrow bone didnt come cut into halfs, so it was difficult the cook it through. By the time the inside is cooked, most of the marrow melted into oil. any tips?

    I agree it looks horrible, but I bet it tastes great with the acidity of the sallad to cut through and the scraping texture of the bread as a contrast to all that fatty goodness. I've seen similar recipes in the past but I've never actually tried them. Will give this one a go for my birthday breakfast, possibly with a poached egg and truffle shavings! :D

    Putt some ginger, garlic, green chilli paste over the marrow before roasting it.... I dont like garlic but its the recipe. This will elevate the overall taste

    Nerd mode engaged, when soaking the marrow, the "blood" you see is not blood, hemoglobin, but myoglobin, as during the initial dispatching in the abattoir the blood is drained from the animal! Sorry Scott couldn't resist!
