Roasted Beef Marrow Bone On Toast.
Тәжірибелік нұсқаулар және стиль
Roasted Marrow Bones, with a fresh and punchy Parsley salad.
The marrow bones are roasted till they are unctuous and meltingly tender, then served on toast with a super fresh and clean salad, which cuts through the richness of this decadent dish
My take on the famous Fergus Henderson's dish, its pure indulgence.
Enjoy.

My mam would always throw a marrowbone in a beef stew while it was cooking it makes the gravy really rich. Pissed the dog off too when he got the bone with no marrow lol
Nothing like bone marrow. Love it with the parsley and onion
I never thought I'd be watching butchery videos, but you do a great job of making the craft interesting and accessable.
Scott, you're really a true inspiration. Thank you for all your videos. Hunting hello from Slovenia
I've made marrow bones a few times and have seasoned it with S&P before roasting....absolutely love it. Thanks for the tips on the salad! Have a great day!

Scott Rea You are ****in awesome man. Seriously going to watch every video and if I could have apprenticed under you I totally would have.
That looks tasty! I love bone marrow.
Excellent video Sir. I can't wait to try them.
My grandma used to take all the bits and pieces left on the pig bones and carcass and mix it with flower and make a loaf out of it. Then a day later she would slice it thin and fry it in a pan with lard. Pretty tasty, even as a young child. She used to call it "pawnhaus". I think it is an old German dish or something. Thx for the video. I will have to give this a go. Cheers
It's supposed to be good for you, the collagen and gelatin are like a super boosting food. Great job Scott!
another good one.
them bones.... one of the most interesting channels on youtube...
WowLooks amazing!
Awesome video and I love the commentary
Looks delicious!
I love me some beef butter. When my grandma makes caldo with beef shanks, the first thing I do is scoop out that one little (but satisfying) spoonful of beef butter and everything feels right. It's just that good.
My gran used to make the most delicious marrow bone broth and dumplings so good and a great winter warmer
excellent recipe! i have been wanting to try this since i saw anthony bourdain eat the lamb bone marrow soup at food market in hong kong. seems really easy and simple! cant wait to try it
marrow, good. i especially love elk marrow.
That's a great video Scot! I enjoyed. Have a nice week ;-)
Had this at St Johns and yes, special. Cheers Scott
Looks great 👍 xx
that was just ridiculous. lol. I haven't had marrow in ages, and as I sit here now I have to wonder, why the he'll have I been depriving myself. life is short and meant to be enjoyed, cherished, and most of all lived. thanks, for the inspiration, my friend. here's to you!!
Great video, as always sir. I don't think I could work up the courage to try this one, but I really enjoyed the video, and the education, I've been learning a lot from your videos and I really appreciate all the work you put into every one! Thank you again, from Canada :)
I stayed up all night for this video! Oh, and first.

Thats dedication Mitchell, nice one mate, cheers
Worth a try. I love your channel.
great!
You got this one nailed. I opened with this in Australia for winter with a smashing result. You do need something to cut through the fatty tongue effect, try sumac and smokey paprika for a twist.
"sex on a stick" ROFLLLL 😂😂😂
I have to give this one a try. Nice one mate
ive never really tasted this marrow but my mom cooks osso bukko and the marrow in the bones is delishious
who dosent Love Bone marrow!!
A delicacy where I live is to bake bison marrow and spread it on toast. It's called prairie butter.
Dang it!!My mouth is watering :D
wow Scott - I'm headed to the oral surgeon in a few days to get a whole lot of rotten old teeth out. Tell you what though, during these days of not being able to eat properly I've been LOVING your videos - they remind me of how I'm going to eat like a beast once my teeth are all better again in a few weeks time!
Think i'm going to give this a go and use it in a recipe. I'm sure I have seen it being used in a spaghetti recipe once, i'll have to look it up and pop it on the channel! Thanks Scott!
Had bone marrow with toast at a hotel in South Africa (we often visit on holidays as it's close to Angola where we live) and it was the best damn thing I've ever tasted. It's like butter with a amazing pork-fat taste that spreads much easier.
never knew you could do so much with marrow!
Bone marrow has allways been top 10 on my tasty list. Lamb marrow is my fav tho.. keep on the good work mate! Cheers! @scottrea
That's look good
That was great! I want to learn how to do this.
i always get hungry watching your channel
Nice video as always! I've throw thousands of shin bones out and never tried this, but I might have to give it a go. The part about " nobody panic I flipped the board over and cleaned it" gave me a good chuckle!! haha You da man!
Yum, my favourite foods are always the cheap cuts.
We've always eaten the marrow at home. Apart from my brother, he became chef :-D
How do you cut them lengthwise?
You're killing me. Dirty is good. I'm cooking it tonight in California.
God what I would give to have a real butcher close here in Florida . They sell round marrow bones for soup but rarely long ones . DIRTY IS PERFECT WORDING for how it feels . Animals cant be wrong for working so hard to get to it . Will try the salad as sometimes it gets too rich . Great vid
Gorgeous 😍😍😍
More sausage videos please! Breakfast sausage or poultry sausage.
I wish this was more available in restaurants since I've loved it every time I've had it. It's a bit of work for something that I'd be the only one in the house to eat though. Perhaps I'll just suck it up and make it for myself anyway.

There's always a way to enjoy it at home- get a section of marrowbone cut accross (in my country butchers sell them dirt cheap just for that purpose) and throw it in the pot when cooking beef broth. When the broth is done, all you need is a pinch of salt and a slice of bread. HTH
I have been asking around butcher shops for marrow bones since 2011 and I'm always met with the same "ufo landed in my backyard" sort of look from them. So frustrating:(. I assume you are a butcher Scott and i pay my respects to your awesome craft and doing it the right way! :D
Bone marrow is amazing. Scott, i recommend stewing whole uncut pieces, but able to access the centre, of bone with curry spices. I am an asian man and every asian lady cooks lamb/sheep/beef on the bone and off it, but will always have multiple 1 inch chucks of the bone in their curries. Good this is it doesnt melt away, it gets a seal and stays gelatinous. Even at 19 i call them 'hole goos(meat in my language)' and have been since i was 5

people commenting as though they occasionally eat marrow, i eat it at least 3 times a week!! So easy to let it stew as a curry
so when can I come over for dinner? Looks amazing.
i have tried this but the marrow bone didnt come cut into halfs, so it was difficult the cook it through. By the time the inside is cooked, most of the marrow melted into oil. any tips?
Bought some bone marrow. Gonna soak it overnight and rock and roll....
might have to try this one, i mean its no meat teddy. but it looks great
Never had this Scott, we shall see.
Drooooolll :)
This guy is so funny!!!
you can soak in milk also to pull the blood out, I do it with fish often.
didn't know how easy it is to make.
can i have a deer liver pâté recipe. was going to use it for boudin but changed my mind
Making this, you will have a friend with Anthony Bourdain, lol! Wonderful video as always

beef marrow bones. from the femur (leg bone).
I threw a marrow-filled bone into an oxtail stew I made, just the other day. 👍
was always leery of trying this, but since it's so damn easy to make....
Are you saying old asbestos hands? If so, why do you say that? I've noticed it in several videos and I'm just really curious
I agree it looks horrible, but I bet it tastes great with the acidity of the sallad to cut through and the scraping texture of the bread as a contrast to all that fatty goodness. I've seen similar recipes in the past but I've never actually tried them. Will give this one a go for my birthday breakfast, possibly with a poached egg and truffle shavings! :D
Putt some ginger, garlic, green chilli paste over the marrow before roasting it.... I dont like garlic but its the recipe. This will elevate the overall taste
Nerd mode engaged, when soaking the marrow, the "blood" you see is not blood, hemoglobin, but myoglobin, as during the initial dispatching in the abattoir the blood is drained from the animal! Sorry Scott couldn't resist!
local raindeer herder promised to throw in some marrow bones for my next order, curious to see the difference compared to beef
The dog ain't getting NOTHING tonight.... dem bones is MINE! . .... alright, I give the dog some bagged kibble bits and tepid tap water. Alright, filtered tap water, because I'm in a good mood. ;)
Have you had lamb bone marrow? So different compared to beef bone marrow. I love the lamb one more
