This looks delicious, but I’m afraid I’ll have to agree with Thomas on the canned pea issue. They’ve improved a lot since my childhood, but I never quite conquered the memory of pitiful, gray-ish vegetables - oops; I guess they’re actually legumes - staring me down from my plate. I love the frozen peas, though, so thank you for the tip on substituting frozen veggies. And seriously, who doesn’t love Ritz Crackers?? 😂

Hate canned peas

If you're using canned veggies, after you drain 'em, RINSE 'EM! Takes that "canned" flavor w-a-y down! As for the Ritz crumbs, you can take a meat mallet and "beat those crackers like they owe you money!" (Quote from David, host of "One Pot Chef Show" here on KZread...)

I love peas and carrots but I would probably use frozen peas and fresh carrots. I would have to cook them ahead of time. Looks delicious!

When my hubs was alive Mon, Wed & Fri he would pick up a rotisserie chicken for lunch. He'd eat the drumsticks and a thigh then bring the rest home. I would use what was left to make chicken salad for lunches & use what was left in a soup, enchiladas.. or something else that went in the freezer. I still pick up one of the chickens once a week & do the same thing. I have to make this casserole. It looks delicious.

Did someone say CHEESE! 🧀 Oh yeah! 😍 This definitely looks like another winner winner chicken dinner! 😘 Can't wait to try it Catherine! 😋 For many years I've been using frozen peas and carrots and you can buy them together. But I would generally add frozen corn to a lot of dishes. Now, thanks to HEB, I can get these three items together in a bag. And I almost always have a bag of this combination in my freezer. ☺️ And who doesn't love Ritz crackers on a casserole! 🤗 In fact, I think Paula Deen had a recipe for a chicken casserole that she put Ritz crackers on. I searched high and low for her recipe but never found it. But no worries, now I have your recipe! 🤩 Thanks for sharing another great recipe! 🥰

I'd use California Blend. I'd try snow peas and broccolli. I'd also try onions peppers and celery and maybe drained chopped tomatoes or Jerusalem artichokes.

For casseroles, we use caned chicken. Sounds weird, but it is breast meat cut in pieces. It is easy, inexpensive and moist.

@@mskulagal We use about 2 cans for a casserole. I get them at Aldi, and they cost about $2.25 a can. Drain them well and flake the chicken. They are handy because they can sit on the shelf for a long time and are ready to use when needed.

Our family doesn’t like the taste of canned chicken and we have tried several brands. The rotisserie chicken is very flavorful. I also use Catherine’s recipe for baked chicken too. I do those on the weekends sometime.

For anybody who wants to know if they should make this recipe... ABSOLUTELY!! This was an AMAZING dinner!! You know it was a delicious dinner when you bake it in a 9x10 baking dish and there wasn't any leftovers!! And there is only 3 people that lives in our house!!😋

This is a delicious way to use canned vegetables and soups from your prepper pantry. We usually only use fresh vegetables for dinner but we put up a lot of canned for when hard times comes. But I wondered how we would feel when we have to eat the canned version. This casserole looks as if it would be a good way to make a filling meal using just our supplies. I look forward to learning more. Also I know that the rotisserie chicken is the tastiest way to go for this recipe but if all you have is canned chicken I'm sure it would work here too. I'd also throw the bones from that chicken into a pot, cover with water, a cut up carrot and a little onion and simmer it for a few hours then cool and strain it and put up some homemade chicken broth into the refrigerator to use for soup or to cook rice or use in a stew.

This would be soo good on a rainy day (which it is today) I think when I make it I am going to add a can of corn also. Thanks again Catherine!

I agree with your hubby on the canned peas, but I do love frozen peas. I don't eat canned carrots at all, but hubby does, so in the pot they will go. Definitely going to try this recipe, it looks delicious.
