I would go ahead and add some thawed peas and carrots from my freezer, just to make this a one dish meal! :)

Just a tip. Local stores may mark down chickens at half price. I buy 2 tear them apart. Save bones and skin and make 3 qts of bone broth. Save legs thighs of other dinners and a part of breaststroke for chicken salad. Always in my freezer for go to meals.

Catherine,love your recipes,and this looks wonderful,but I tried those no yolks once ,and never again,ruined my dish that day in another recipe.They just don't taste like the other brands of pkgd noodles.Please these days and times don't waste your time and ingredients on these noodles.

Had this casserole. I was in the middle of preparing it, when I started to feel a bit funny. Decided to go to Urgent Care. Put the pots in the fridge. Long story short, I was having a slight heart attack! Came home from the hospital 3 days later. Had this casserole on my mind the whole stay! Made it yesterday when I got home. It was delicious! By the way, I’m fine, and all tests were clear!

I will be trying this over the weekend. Will probably fry up some bacon and let the chicken cook in the rendered bacon grease. Mix the bacon in before adding the Swiss and topping. I might also throw a little swiss into the Bechamel and turn into a Mornay Sauce but not as thick as mac and cheese Mornay.
