Rick Bayless Mole: Classic Red Mole with Turkey

From the 12th season of “Mexico: One Plate at a Time” (the season where you selected dishes for our “Bayless’ Best Ever” theme), comes a classic central-style red mole that begins with the traditional toasting of chiles, in this case the dark and earthy pasilla, mulato and ancho chiles and the sweeter ancho chiles-and then it’s off to toast or roast nearly all of the remaining ingredients. This preparation owes its extra-silky texture a browned turkey breast, which gets nestled in the mole for a short-ish braise.

    Been making Rick's Black Mole for over 20 years, haven't made his Red Mole in a while but did last week and this recipe is absolute fire! Forgot how good and easy this is to make. If you want the quintessential "mole" with chocolate, I think this is the perfect recipe and will be far and away better that anything you can get in a restaurant (except for Rick's, of course).

    Not sure if this is the same mole but quite a few years ago I was in San Sebastion de Oeste and stopped for lunch in a restaurant (next door to a funeral parlor no less... gotta love Mexico lol) and I had a red mole with chicken, same colour with sesame seeds and served in a big clay bowl... I remembered how much I enjoyed that lunch to this day.

    Love your comments about getting a Mexican grandmother/abuelita. Here is my trick, go to LA and visit the chili and spice vendor in the Grand Central Market. They import 15-20 different moles from grandmothers all over Mexico in particular Pueblo and Oaxaca. I buy 4-5 pint samples of the sauces cooked down each time I visit. Making a sampler of 3-4 makes for a fun party along with some grilled chicken, pork and turkey. Ymmmm!😋

    IDK how this wonderful, brilliant, calm man is Skip Bayless' brother, but it is what it is. Rick, you are a treasure, sir. I could watch you cook for days on end. You're a really good teacher as well.

    El pavo le añadió gran sabor, muy buena idea, me gustó mucho, 👍👍. La receta puede variar, mi tía usa además platano macho frito, y también una tortilla frita, se puede poner también piñón pero depende del gusto. Felicidades por el canal, muestra gran fidelidad a la cocina mexicana, gracias por eso 👏👏

    Interesting to see how this variation differs from his 1996 version in "Mexican Kitchen." This one seems more laid-back, more chilled-out.

    Could I use pork instead of turkey and if so would you recommend butt or loin?

    What would be best to substitute for the lard? I have alpha-gal, which makes me highly allergic to mammal products, especially fats. I can get away with butter and other dairy.

    No achiote seeds in mole. Mole is not from the Yucatán.

    Scrambled eggs and red sauce No Seeds edit just like a water consistent they made it when I was young and I've never had it again I've only seen one place Makin it wasn't that good when I want to know what kind of chili did they use chili sauce like I said it is like water consistent if that's the right word not thick at all just like water-based what scrambled eggs

    egg in sauce or egg with chili; roast 4 tomatoes and two serrano or jalapeño peppers, a clove of garlic, beat 4 eggs, heat a frying pan, put 2 tablespoons of oil and pour the egg until golden brown, turn it over, grind what you roasted in the blender with salt and a pinch of cumin and cup of Water pour over the egg and let it boil
