    T-Roy, you changed my life. I got a Weber Smoky Mountain as a gift, and using your videos as instruction, I’ve been smoking beef and pork ribs, pork loins, and tri-tips for weeks. I’ve lost a bunch of weight with what I guess is the keto diet, and my co-workers all rave when I heat up my lunch at work. I’m drinking a Budweiser Picanté Chelada right now, smoking some beef and pork ribs with applewood chunks; we’ll see how this compares to the pecan and hickory I like so much. Thanks for teaching me how to smoke, T-Roy. It’s just barbecue. Cheers brother!

    My wife bought me a Weber Smokey mountain 5 years ago, I didn’t have a clue what to do. All I knew was, that I love eating bbq. I came across your vids of you using your wsm, and I learned from watching you. Now I just bought a Weber kettle and a slow n sear. And low and behold, here you are making videos with that. I just want to say , “thank you”. I’ve became a decent pit master, and your vids have been a big part of it. Keep it up man!

    Love ya t-roy been watching you for about 5 years. First video I watched of you was home-made beef jerky. Been a fan of you ever since! Love your charisma and love for grilling/cooking.     I actually got my Kettle too hot for this cook and the rub burnt a bit at the edges, but it still turned out fabulous. If you use a rub with lots of sugar, I'd suggest cooking ribs at 250F or 225F or you could wrap them sooner than I did to preserve a good color on the ribs. As you could see in the video, even I still make mistakes!!! LOL Cooking is fun!!! Cheers to ya!

    I have a pork butt and some beef riblets on my 18 WSM.. It's hot out today so the temp is higher than I would like it. At least my new wireless probe works and I finally after 8 years have a probe on the grate for the on the deck temp.. Running about 240-260 today. Love the videos T-Roy!! Glad I found your channel.

    What I love about BBQ, you can screw up a little and burn sugar a bit, but still turn out great. I'll use rib candy as only sauce, good stuff

    Very true Bobby and I appreciate the kind words. I still do mess up at times such as in this video. I should have maintained a lower cooking temp so the rub wouldn't get burnt on the edges.     Hope you do give it a try! It's probably the best vinegar based NC sauce I've ever tasted. And the Hot version that I prefer isn't hot with cayenne, it's got a spicy kick because of the fresh black pepper they use. Really good stuff!!!

    Those ribs sure look good. Going to have to try those sauces on some ribs. Meat shortage not so bad in central Louisiana any more. Scored my first prime brisket on sale at $2.98lb.     You are going to love the flavors Aaron. For that Craig's rib seasoning, I'd keep the WSM at 250F for the ribs so that the seasoning doesn't burn on the edges like it did in my video. Live and learn!!! LOL Cheers to ya and thanks for the support of the small Mom & Pop businesses!

    Yeah, you will get there Randy. It just takes practice and I've been doing this a very long time. And as you saw in the video, I still make mistakes myself. I had the Kettle running too hot and slightly burnt the rub on the rib edges. They still turned out to be some of the tastiest ribs I've ever cooked though!!! Live and learn brother! Cheers to ya!

    I bought that charcoal basket from LSG. it makes it so much easier and conserves much more wood.

    I think those ribs looked great brotha Troy. I run my cooks at around 250 265 unless its chicken or turkey then I do 325. Hope you and Karen are doin well brotha. Cheers
