Hectors Smoke House it is a nice unit. the ash catcher is a real difference maker for me. it also has a built in meat probe with display. no vacuuming is the ticket though. I drooled over the Yoder and other higher end pellet smoker but decided to go the inexpensive route. for reverse sears, I use it for the low and slow part and use my Slow'N Sear for the sear. works great!

llamawizard the lack of being able to reverse sear is the one thing really holding me back. I hear the 640 can dry meat out as well vs using the slow n sear which holds water.

Excellent review! I've had my YS640 for 4 years. Not a single problem. One other option I would recommend is Yoder's Thermal Insulating Jacket. It's expensive (US$249), but works great. I didn't buy mine initially, but after doing a lot of cooks during cooler temperatures (I live at 7,000 ft), I decided to get one. Wish I'd have bought it on Day 1! I use about half the amount of pellets during low-and-slow cooks. Not only do I save fuel costs each time, I have extra confidence on overnight cooks that I won't run out of pellets (the hopper may not be empty, but it does cone a bit where the pellets are drawn into the auger).

Great review. Have had my Yoder YS640 for two years now, still love it. In regards to the heat deflector. the new one is beefed up with a removable door that makes cleanup very easy . Also you mentioned you did not really like cooking steaks on the grates because of the grease on the bottom of the smoker. With the new heat deflector I leave the deflector in place and just remove the removable door and cook the steaks with some but very little grease on the bottom.. Thanks..Mike

Thank YOU, Hectors Smoke House! Very thorough review. I am interested in a pellet smoker/grill that can do both equally well. After watching your review and several others, I'm going to purchase the YS640. My wife and I are moving to a community that only allows electric and gas grills. The electric pellet grills/smokers are considered an electric grill. I have to sell my stick burner and charcoal smokers and grills, but this is a great alternative to having 6 other grills and smokers, which I'll miss.

Thanks for the thorough review. I am agonizing over buying the Yoder to go along with my green egg. There are some difficulties doing long smokes with the egg and what I consider safety issues to add more charcoal or wood chunks during the cook or try to remove the heat deflector to get a reverse sear. You did a great job and answered many of the questions I have about pellet smokers. I agree that buying a high quality grill or smoker makes all the difference and this cooker looks great.

Enjoyed the video and I'm sure once you get the new deflector plate your view on direct grilling will change a bit and cleanup is not that bad especially when you would have to dump charcoal anyway. I can't believe these don't ship with the removable door, but I guess it makes Yoder a few more $$ this way. Also, the 9" upper grate is a very nice addition and makes using the grill grates much easier without having to remove the large upper grate so you can flip stakes. I can still stack those Boston Butts up top on the 9" just as well as before.

I have been cooking on a Weber kettle for almost 15 years but I am getting close to stepping up my game. It is awesome that you have done reviews on 2 of the smokers that I am considering. So my question is if you are looking at the low and slow option only but with limited hassles what pit would you chose? The Yoder YS640 or the Stump’s gravity fed? Obviously I have spent a lot of time monitoring temps on a small kettle but I need to get my weekend back! Just awesome that you have both but I can only afford 1 of them right now (kids) so what one takes 1st place in your book? I know not an easy answer. Thank you!

  • @HectorsSmokeHouse

For Low and Slow, I would choose the Stumps. Reasons are - more shelf space, ability to add more smoke flavour, charcoal is much cheaper than pellets. Both are great for low and slow and both are great for temp control.

Great video. I'm a traditional direct fire griller, but for the last couple of years, I've been wanting to get into offset smoking. I was looking at stick burners, specifically Old Country BBQ Pits. Would the Yoder be a good choice for the novice smoker? I know purists like Aaron Franklin scoff at pellet grills. What's your take on traditional stick fire boxes vs. pellet grills? Is it better to master stick fire boxes?

Hi David, I have a video about choosing the right grill for you, just check the channel. I'm not a BBQ snob so don't care how I get tasty, tender meat. I still use my Yoder Pellet Grill and you can set and forget. Stick Burners give an authentic taste but need to be fed every 45 minutes and I prefer to sleep on overnight cooks :-)

Greetings from Colorado! Well done, mate! All this grill needs is the ash removal design that's on the Camp Chef grills. I have a shop vac I can use, but I'd like to have a quicker, simpler way to remove the ash. Then, I could use the vac every so often to get it cleaned out really well. The Yoders are built like tanks, which is what I prefer. Most others are flimsy metal. The Yoder will retain heat better in colder temps. Thanks for the review!

I agree with this, as I recently bought a pellet grill as well (GMG). With that said, I think a *LOT* of people simply over smoke their meat. Unlike many of my local BBQ friends, I always shoot for TBS (thin blue smoke) and find the smokiness similar to my WSM. Of course, I can build a fire in the WSM to spit out thicker/white smoke and get a deeper smoke profile. I think there is something to be said about a more subtle smoke flavor...just like with rubs, sauces, etc. I also think it's much more of a challenge to maintain TBS throughout an entire cook with a conventional pit. A nice balance and not overdone with any 1 aspect of the BBQ.

Stupid question maybe....but Ive heard a lot of good things about these pellet grills. My question is simply this...can be be used in the rain and/or left stored outside? Or does it need to be covered when not in use. Just curious if you were in a competition during a rain....how do you account for that? I really like the idea of a pellet smoker. I have a UDS with a BBQ guru temp control unit which is great for long cooks. It monitors and adjusts temps fantastic..but I am limited on space. Looking to hear and read more about these units. thanks for the review..and let me know how you account for wet conditions. Thanks.

300xcrider don't leave it open too long or the temp will drop off and the auger will d Start dumping pellets, when you close it, those pellets will have to burn off and it will get hot before the control unit can regulate again.

Just lay some aluminum foil in the bottom of your grill when you have the heat deflector out and then you can just pull it up to clean the grill out.

I know there are ways around this but I find it inconvenient. When I grill on my kamados, the fat drips onto the charcoal, causes a flavour flair and then evaporates. Not needing to be cleaned up.

I have a Lang offset stick burner which I really like the flavor of the way she smokes but it takes time and effort. There are times when I just can't spend that much effort cooking. I do a couple of competitions per year so pit mobility is important. I am considering adding a pit that would be less effort but still has great tastes. I will also keep my Weber kettle for backup and short cooks. Thus I am considering a Yoder 640 pellet or a Ole Hickory ACE BP (OH). Both are expensive with OH being higher. Cost is important but not the deciding factor. The Yoder is a quality pit but all pellets don't have a strong smoke flavor although there is things to do to maximize the smoke. Many users claim adequate smoke and I don't like strong smoke anyway. I like the flexibility of the 640 with the wide temp range of low smoke to high searing/grilling. I like being able to smoke for time at 250 then raising to 500 to hot sear with one pit and little effort. A pit that can low smoke and high heat grill seems a good thing. The Yoder competition model does have the mobility that is like. Also I still have the Lang for times when I want that great all wood flavor. The OH seems to cook more closely to the flavor of the Lang or charcoal/wood. It has max temp of 250 - 275F. Doesn't have the high temp range. OH is very high quality in build and food production. Very good reputation. It could be a replacement of the Lang instead of a supplement. The pit is not really made to move around. It has small casters difficult to load onto trailers. I keep vacillating between the two. Each has pros and cons that I see and probably only I can decide what is important to me. I tend to favor the Yoder 640 but can't seem to get over the reputation that Ole Hickory has in the bbq commercial world and high praise of the owners. Please give me your opinion good and bad. Don't spare any criticisms either. This has to be my last pit purchase!

Donald, I think you've pretty much nailed it. The Yoder only has a very subtle smoke flavour. Here in Australia I think that is a good thing, as we have not yet developed a taste for heavier smoke. It is very easy to move around. It is set and forget. However I'm not overly keen on the grilling side, it only covers a small area of the pit and the fats make a real mess at the bottom of the cooking area. I like my pit clean and this really bugs me. If you are cooking in Comps and need to move the pit around, you will need large wheels. Small wheels will not cut it, unless you have a trailer with a porch. This will make the OH very difficult to use. I have another option, I am just about to receive my third Stumps Gravity Fed (Junior). It has large wheels, you add flavor woods to suit your smoke profile, it is set and forget (a full hopper of charcoal will last 15-22 hours, depending on the model), you can use a guru or use it manually (a guru moves less than 1f during the night), it is incredibly economical to run, it will take full size hotel pans and it is heavily insulated. The negatives are:- its more expensive and it only cooks 200-325f I am moving wholly to Stumps for competitions later in the year due to consistency of temp, smoke profile, set and forget, easy to move, shelf space, economical, less (no) reliance on power. Anyway :-) thats my 2c worth, hope I haven't confused you more. Have a look at my channel, I have a review of the Stumps Classic.

Hi, I've had a Yoder now for 3 years and the comments in the video still stand. Love the convenience, love the set and forget, love the versatility. Don't like the standard deflector but love the trap door version, prefer to grill on my kamado but it great if I don't have a kamado. BTW I was happy to win Reserve Grand Champion out of 48 teams this weekend on the Yoder and Stumps 😃

Hectors Smoke House I don't own a Yoder. Was thinking about getting one. Is there any long cooks you have done where a full hopper of pellets wouldn't last the whole cook or will a full hopper get you through any single cook? Kinda worried about the 20 pound hopper with a smoker that's not the most pellet efficient.

I think a 12 hour cook has been ok with a full bag of BBQrs Delight. It will struggle with a 15 hour pork butt. The main issue for me is that the pellets don't drop evenly. They can create a vortex which can cause it to run out of pellets to the auger. You have to put your hands in and level off the pellets after 6-8 hours into a cook. This has been the biggest worry for me.

It's a trade off. Storage shelf v awesome look/manoeuvrability. I started with the shelf but needed to move it around and the small wheels struggled. It's great that you can choose to suit your circumstances 😁
