Searing Tomahawks on the Yoder YS640S

You can't "SEAR" Tomahawk Steaks on a Smoker, OR can you??? Today we sear Wagyu Tomahawk Steaks on the Yoder YS640S pellet smoker. This might just be the ultimate cooking apparatus in our cooking arsenal! Does it make as much smoke as a stick smoker? Probably not, BUT can you sear and smoke on a stick smoker without babysitting it all day?? The answer is NO! I love my stick smoker but I could get used to this Bad Boy.     That looks absolutely fantastic. Yes, the temp will come up in the center when you rest because the outside is hotter and it will make its way to the center. If you don't let them rest you'll have crispy edges with an uncooked center.

    Awesome content! Tomahawks are my jam! I've been using a traeger timberline and a charcoal weber for searing - but I ordered the YS640 last week for the grilling feature to make life easy... Great review video on the smoker a well!

    I just bought a Yoder 640 with those anodized aluminum grates. They told me that I needed to not go over 450 degrees with them or they would warp. Doesn’t look like its a problem for you.

    You know the amazing thing is Malcom Reed on how to bbq right did a test on resting meat. He covered one steak with foil and not the other one. His results were that the uncovered steak rose in temperature more than the covered steak. Go check out his video. By the way you did an excellent job on the video and wow what a beautiful yard and house. God bless you.

    I'm looking at a pellet smoker vs traditional. What bothers me so much is the technical components of pellet grills. I've read the comments about preplacing this board, fans etc and it just seems to take the fun out of smoking and grilling. I mean it looks like a fine end product, the food, but we've all done the same on traditional grills and smokers.

    They both have their pros and cons. Can't beat the simplicity of a pellet smoker. I haven't had many issues with mine. Can't beat the experience of an offset smoker, and you get a slightly better product. That being said, it's a lot of work, and there's a lot more to go wrong. You're going to be happy either way.

    So, you seared each of those steak roughly 4 minute's each? Shifting and flipping them in 1 minute cycles? Liked and now subscribed

    Yes, those were very thick steaks 2.5". I seared 1 minute, then shifted to get the diamond sear mark for another minute. I then repeated on the other side. Use your instant read thermometer to make sure you're not over cooking 👍 Good Luck 😎

    Hi just wondering if you are getting consistent Temps with your yoder. And where do you keep your displacement damper. That's the hardest thing for me to figure out is where to keep the damper

    My experience with this unit is still limited but I have been getting pretty consistent results since they replaced my control board. So I had this same question and I actually interviewed one of their support people and as I understand it, the damper was more important in their older smokers. They've since changed a lot with how their fans work and they said it's not as critical as it used to be. They said I should run it all the way out for the most consistent cook. They said push it all the way in if I'm searing steaks. Anything in between doesn't seem to matter anymore. I'll keep playing with it and report back.

    Do you have the grill grates sitting directly above the fire or are they sitting on top of the regular grill racks?

    Yes, they are sitting above the fire window. There's a heat deflector that has a window that can be removed to expose the fire directly to the meat. The grill grates replace the normal grill racks. I guess you could place them on top of the racks but I just replace them. Hope that helps!

    Been using Hickory CookinPellets lately. I use the Traeger ones also, just because they're easy to get 👍

    They look marbled like Prime rather than Waygu. I prefer salt and pepper only on Waygu. They should have lots of flavor on there own.

    @@grillmastere we ended up buying the Yoder with comp cart. We couldn't be happier. The Smokin Brothers struggled to get over 375 but not with the Yoder.

    You skipped videoing the main reason I came to watch this. I wanted to see how the grill goes from indirect heat to direct flames. What exactly is the process? Did you have the take the grill apart? Can you do it while it's still hot from smoking? I'm not going to spend this kind of money on a grill if I can't EASILY go from smoking to grill or sear. There are other cheaper pellet grills on the market that can do this with an external lever.

    Sorry, there’s a little window in the diffuser. You just lift it out when you’re ready to seat. Some people take it out in the beginning of the cook and use the insert griddle as a diffuser of sorts.
