    team no wrap. let it go 10-14 hours. be patient. low and slow is worth it.

    How is your grill holding up? I’m interested in pulling the trigger on a mill scale but need to justify the price. My biggest worry is rusting

    I just bought a Yoder 640 with those anodized aluminum grates. They told me that I needed to not go over 450 degrees with them or they would warp. Doesn’t look like its a problem for you.

    You know the amazing thing is Malcom Reed on how to bbq right did a test on resting meat. He covered one steak with foil and not the other one. His results were that the uncovered steak rose in temperature more than the covered steak. Go check out his video. By the way you did an excellent job on the video and wow what a beautiful yard and house. God bless you.

    It seems like at 1500 degrees all the seasoning you put on is just burnt not necessarily seared. I think just salt is about all that can withstand that temperature.

    Salts burning point is about 1474 F so that may even turn to ash.

    I’ve never scene anyone cook a brisket fat side up. You cook them fat side down.

    Still has a way to go. A little fiddly and floppy with the tray. Definitely hot fast. Was that really pizza? Loosely i guess. This price point is for people who have multiple outdoor grilling and cooking items and they want to get more. If i were to spend that amount, it would probably be to compliment my grill with a pellet smoker or to add a pizza oven and i would still have money left over compared to this. I foresee this getting YT time for a while but then fading until they update it.

    That looks absolutely fantastic. Yes, the temp will come up in the center when you rest because the outside is hotter and it will make its way to the center. If you don't let them rest you'll have crispy edges with an uncooked center.

    They look marbled like Prime rather than Waygu. I prefer salt and pepper only on Waygu. They should have lots of flavor on there own.

    Being a “newbie” it would have been nice to see you actually going through the trimming process. I realize there are other videos that show the trimming process, but it does not seem to be universally identical. So it would have been nice to see your process for trimming. Thanks!

    New viewer to your channel, I recently purchased the ibex 10 LHG, which is the ibex brand twin of the NoBo 10.6, but with the new independent coil spring suspension so little more Offroad capable. These little trailers seem to be the perfect fit for those of us that are already use to bikepacking, hiking, tent camping. Provides you just enough what you need but nothing you don’t, throwing your gear and go. A quick note that some of the equipment you showcase has been upgraded on the newer models.

    No, marbling actually makes it more tender.
