Retro style Vanilla Cake with German buttercream

I like decorating the cake.
The taste should be good first, But I think the cake will taste better when it looks beautiful.
Retro styles have been popular these days in Korea. And also the retro style cake design also returned.
I love flower patterns, so I piped a lovely flower pattern on the cake.
I baked a vanilla cake. It is like a vanilla pound cake.
Brushed on enough the cake sheet with rum added syrup when icing.
It came out soft and moist.
The buttercream that I used for this cake is called German Buttercream or Creme mousseline. I found there are two names.
Both are the pastry cream (creme patissier) based buttercream.
So the basic recipe is almost the same, but the amount of butter is different.
In comparison, there is more butter in the German buttercream than in the creme mousseline.
There's no big difference but the amount of butter.
Some call it German buttercream. Others call it French buttercream (creme mousseline).
Actually, I'm confused. Please tell me if you know about that.
I increased the amount of butter for better icing and piping work by the way.
This cream is silky and smooth, so it is used as filing cream in Fraisier cake, Puff, or Mille-feuille.
Frost it on cupcakes also. You can add flavors like chocolate, coffee, and green tea.
I recommend you to use vanilla bean instead of vanilla extract when you make the pastry cream.
Because it definitely tastes good.
I added some Icing sugar at the end. But it depends on your personal taste
Little more vanilla extract will make cream less buttery and boost the flavor, so I hope you add it in.
If you don't have vanilla bean when you make pastry cream, so just put vanilla extract in it, make sure the total amount is not more than 10g.
Too much vanilla extract can break the balance of taste.
Also, if the buttercream seems too stiff, Add little milk or whipped cream while whipping. Then you will get the consistency you want.
I know some of you feel uncomfortable with buttercream cakes because of the fat.
As it turns out, the milk fat content of this cream is a little more than whipped cream.
If you want a buttercream that is not too greasy and not so sweet, Please try it.
If you like classic vanilla cake, I recommend this. It's perfect for all kinds of celebration cakes.
Ingredients
♥ ︎Vanilla Cake
280g Cake flour. (Not all-purpose flour)
200g Sugar
6g Baking powder
2g Baking soda
170g Unsalted butter
2 Eggs (Large eggs)
130g Greek Yogurt
4g Vanilla extract
1 Vanilla bean
120g Milk
♥ ︎ Pastry Cream
280g Milk
1 Vanilla bean (or 6g vanilla extract)
3 Egg yolks
130g Sugar
25g Cake flour (or corn starch)
♥ ︎ German buttercream (Creme mousseline)
All of Pastry Cream
380g Unsalted butter (room temperature)
Add Sugar Powder if Needed
4g Vanilla extract
10g or 20g Milk if needed
♥ ︎Syrup
60g Water
15g Sugar
7g Rum or Vanilla brandy.

    woa that is so cool ! I have a question that may be stupid, but while the cake is in the fridge with the first layer of buttercream, is the rest of the buttercream in the fridge too? doesn't it harden too much ?

    @@sophieenet4817 it does harden, but you shouldn't worry too much. After leaving it out for 10 mins it returned to room temp and whipped right back into shape

    @@Beebbubs Hi, do you have any recommendations about hand mixers? I've been baking strictly by hand most of this while but more intricate recipes just can't be mimicked by hand without excessive time consumption it seems and even then quality is not secured. But I have no clue what to really look for and I don't want to run out and just by the most expensive thing under the assumption it will be better. But I'm not sure what to look for 😗. Its important for me the parts can be cleaned well though.

    @@NellenelleForSure well, if ur looking for a hand mixer, I can recommend the kitchen aid ultra power 5 speed hand mixer. I have it at home, and not only is it quiet, but like the name suggests its has five speeds. And the lowest is really low, which works for when a recipe needs you to be gentle. The high as well, is really fast without being very loud. The parts attach and reattach easily, and although at target its $50, I got it for $30 off of amazon. I hope this helped😊

    I love watching cake decorating and have watched many. This one is my favorite so far. Love the vanilla flavoring in the cake and frosting. Especially like the simple elegance of the decor!

    In the description I see there was some confusion as some have probably called the german buttercream/creme mousseline a french buttercream, but those are different things. I think some may call it a french buttercream because of the name “creme mousseline” being french. For those reading this, an actual “french buttercream” is made with pate a bombe, which is basically egg yolks and sugar syrup whipped up until pale and creamy, and then adding whipped butter. It is different from german buttercream/creme mousseline in that german uses pastry cream + butter, and french uses pate a bombe + butter.

    In my country I haven't even seen vanilla beans! When I was little I thought they only had it it America because I would only see them in cooking videos made by Americans

    @@melissacolinbalderas9707 harina para pastel es un tipo de harina más fina en Estados Unidos la venden como flour cake pero si no la consigues en México tines que cernir la harina por lo menos 6 veces y mide las tazas y por cada taza quita dos cucharadas de harina y sustituye por dos cucharadas de maicena busca en el canal de Madeleines cake busca como hacer cake flour ella te dice cómo en español yo lo hago y el resultado es excelente aunque puedo conseguir flour cake no siempre la tengo a la mano y entonces la hago siguiendo los pasos da muy bien resultado saludos

    One question about the recipe... At 5:13 when you add some corn starch or cake flour... Does it matter which one ? Will the outcome be different ? Id love to know Joconde ...

    starch will give a better result because sometimes flour can smell like its raw.

    Ve~ry little different. You may not feel differences. Corn starch will make it smoother. But I found the pastry cream has lumps easily whenever I use only corn starch. I don't know why. Just guess it because of the stove heat or my pan. So sometimes mix two Ingredients or use only cake flour. Actually, I saw the recipe using two Ingredients corn starch and flour in the book from 'le cordon bleu in Japan'. I can say it's up to you. 😆

    Idk if thos is weird but I kinda wanna watch u clean up afterwards cleaning is satisfying and it also helps for when other make it cause it gives us the motivation to completely finish everything including clean up
