Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

There are tons of food channels but this one is the real deal, one of the best. Arnie is great.
I won’t eat fajitas in restaurants ever. They give way too little and charge is ridiculous. I made this, and was way better than eating out! Keep up great videos.

I agree. People are boycotting brisket because of the prices. A single order of fajitas here in central Oklahoma go as high as $32 a plate. Fortunately not all restaurants have gone this high.

Bro how big are you…I’ve never finished those big ass castirons of fajitas that restaurants serve, it’s always for 2 people at least
It was tough watching this because it looked SO good and I can only imagine the smell.
Man, that looks good. There’s a Mexican family that bought a small business a half mile up the road from me. Her food is so good that they had to add on to the place just so there would be enough room for people to eat, then I think they added on again. Now, they just made the parking lot bigger and repaved it to make even more room. I always get carry out as I live a minute or two away and it’s always just as good as eating inside. Her food tastes so fresh and her fajitas look just like yours (in my opinion, just simple with fresh ingredients). The place has only been around maybe 5 years now but it’s well known in my area.

Could be healthy, I mean the food we eat at home in Mexican households isn’t tacos, tortilla chips and fajitas or deep fried stuff all the time. What you get at restaurants are stuff we eat on special occasions, for birthdays etc etc. Our diet is really a lot of soups and stews that include a lot of vegetables and proteins most of the time

You can't go wrong ordering fajitas! And the tip about using the outside skirt steak is awesome!
Try marinating your skirt steak in soy and pineapple juice at a 2 to 1 ratio. It’s amazing!
Don’t forget to squeeze a fresh lime wedge or two on the sizzling platter to set it off!
I am getting hungry. One of my favorite dishes. Great result. Outside skirt steak is the way to go. I would add tomatoes near the end of the cooking just like you did. Many restaurants add tomatoes early on, it sort of turns mushy and watery.

If it’s a good restaurant it’s not really crazy expensive. Probably around $40. Cheaper than a high end steak house. Doing it at home can be messy with splatter in the kitchen. Personally I like feeling lazy and order a few margaritas at the restaurant. Of course if you live in an area where there’s no high quality restaurant fajitas, there’s no choice but to make it at home.
That's funny, "first you hear it then you smell it and wish you ordered that". What I really enjoy about your channel is that you are real and down to earth. The food is real food with real ingredients. No hoity toity nonsense, no attitude, just good food with a smile. P.S. props to the 'stache! :)

Not saying that you should have to but just like a good steak chef sometimes like to put unsalted clarified butter on the hot cast-iron just before taking out for presentation of the sizzling sound I’m not a chef but I know chef secrets
OMG Arnie!!! This looks delicious!! I remember growing up that skirt and flank was one of the cheapest beef cuts as well as brisket. Once people figured out that you could make them tender, the price skyrocketed!!! Same thing happened with Buffalo wing cuts. I'm sure chuck roast is going to do the same thing since people figured out how to smoke them to very tender and juicy.
