I was so happy to see you process this in a water bath, which is the approved way to do it safely. Kelsey did not on her show, and it sent shivers down my spine thinking how many people that could affect. And yeah, I know every one who processes the outdated inversion method does not become ill and/or die, but there are published reasons for processing the way YOU did it. I applaud you. Can hardly wait to make some of this myself.

Thanks for driving that point home for me. Plan on making some jelly this week. Gotta keep the family healthy and maybe tweak the traditional in family safe practices a bit.

Tip: Lay a chopstick across the top of the pot to stop if from boiling over. The bubbles will break when they hit the chopstick. Might need two...

Georgette Swartz I am going to make this also, I'm just wondering how much pectin you used? He says half of a 9 oz package which I can't find anywhere. All I can find is 1.75 oz. Do I use half of that package or many packages to make 4.5 oz?

Yum! I do use ripe jalapeno's and red bells. I like the ripe flavor better and the color. I don't drain the pepper juice away though. I'm curious to know why you do if you know since you got the recipe from someone? Not that it matters cuz it works both ways obviously. If I was a cat I'd done be dead from that curiosity thing a long time ago! hahahaha
