RED BEANS AND RICE NEW ORLEANS STYLE W ANDOUILLE SAUSAGE AND PICKLED PORK

This video is about how to make RED BEANS AND RICE.
As many of you know, we grew up in New Orleans. Both our moms made red beans and rice practically every Monday. Back in those days, you could go to the butcher and buy a ham bone for your beans not to mention they would buy pickled pork and sausage. So what's changed? Nothing really. Some people use plain water, some use chicken stock. Some folks leave out the chopped tomatoes, some add more. Red Beans cooked at home are very different than what you'll get at a restaurant. Restaurant red beans are mostly bland. So if you want to cook some home style, New Orleans Style, Red Beans and Rice, here's how to do it.
INGREDIENTS
1 lb. Camellia Red Beans sorted and soaked in water for 8-12 hours.
1 Medium sized yellow or white onion chopped
4-5 Green onions chopped
Green onion tops for garnish
1 Medium sized bell pepper chopped
2 Ribs Celery Chopped
2 Tbsp. fresh Italian flat leaf parsley copped fine
2 Large toes garlic minced
4 Tsp. Chicken powder (ours is salted)
2 Tbsp. Emerils Essence
7 Cups filtered water
1 10 ounce can diced tomatoes with green chili's
4 Bay leaves
3 Tbsp. Olive Oil
1/2 stick butter
1/2 pound Andouille sausage or smoked sausage
1 pound pickled pork cut into chunks and heavy fat removed.
1 ham bone (optional)
1 Tbsp. Tabasco hot sauce or your favorite hot sauce is fine
INSTRUCTIONS
In a 7 quart pot, melt butter and add olive oil.
Saute' onions, green onions, bell pepper, celery, parsley, and garlic for 5 minutes. Then add the pickled pork and continue cooking until pork is cooked through. Add diced tomatoes, Essence, bay leaves, hot sauce and sausage. Stir well.
Add beans and water and stir.
Add a ham bone if you have one. Nestle it down under the water.
Bring to a boil, then cover and low simmer for 90 minutes stirring every 10 minutes to prevent burning.
Once beans are soft and creamy, it's time to serve.
Here's a few Chef's Notes that are important to know.
If you need more water, only add 1/2 to 1 cup.
After 90 minutes, turn heat off and leave covered. Beans will begin to thicken on their own.
Don't add any salt or pepper until you taste it. Chicken stock powder has salt. Pickled pork has salt. Sausage has salt. As far as heat, the hot sauce is usually hot enough for cooking. If you want more heat, add it to your own serving.
Add white rice to your plate or bowl first then add the beans on top. If you want to be fancy, add rice to a rice ring and pour beans around the ring. Slide the ring off and you'll have a nice uniform mound of rice in the middle.
Served with hot buttered French bread.

    Toss in a Smoked Ham Hock! I have been making RB&R for 3 decades, and the day I added a Smoked Ham Hock (or Turkey Necks for those who don't eat Pork) my RB&R were completely elevated. I've been reading about the Pickled Pork so many times. I am going to try it in my next RB&R. Adding this to my recipes folder!

    Yum. I'm a NOLA transplant living in Denver and I love my RB&R! Two really good meat substitutes that I use if I am unable to find andouille and picked pork (which is the case here in Denver) is smoked turkey sausage and smoked pulled pork (from Costco). A One Pot/Instant Pot works great for cooking the dried red beans too! It cuts your cooking time down to a couple of hours, especially if you want creamy beans. 😁 Lastly, don't forget the Tony's and bay leaves! Let the good times roll y'all!

    I bet your red beans & rice taste great. Between you and I, my wife and I make our own smoked sausage. The smoke comes from an actual smoker so it’s got a great flavor. I didn’t use it because most folks don’t make their own sausage. And you are so right. Pressure cooking is fast and it keeps more of the flavors in the pot! Thank you for your comment!     @@lishster I will definitely do that video. We sold Jambalaya at the local Cancer walk years ago to help raise money for that event. The people across from us were selling Jambalaya, and about 6 other items as well. I figured we’d go home with our Jambalaya. But to my surprise, we wound up with a continuous line that didn’t end until all our Jambalaya was gone. Needless to say, we were thrilled and we did donate everything. So stay tuned.     Oh my gosh. I have tried to freedtyle New Orleans red beans and rice, but I can never seem to get it on point. This looks FANTASTIC. Ill try your method. Lovely. Sandee

    Sandee, Soak those beans for 8-12 hours. They soak up lots of water and plump up. Makes the cooking faster. But never rush red beans. 7 cups of water to finish up.

    Yum, this looks so good! I had to buy a huge container of curing salt to make corned beef so I've been trying to find more uses for it. I think I'll try making pickled pork and give this recipe a go. If you didn't have a ham bone, would you have added more pickled pork? Thank you!

    Absolutely. I usually use pickle pork. When I started cooking many years ago I was on a budget. I figured out that buying a whole ham and cutting it up myself would cost much less. I love that ham flavor too.

    Hi George. You certainly can freeze the leftovers but I think you want to put them in a mason jar. I really can’t answer that because I’ve never done it myself. We buy pickle pork at the grocery but I’m actually very happy with sausage and plain ham for seasoning. In fact, some years ago I volunteered to feed the homeless at the New Orleans Mission. The chef there used ham shanks. There was only ham no sausage. Man those beans were so good, hmmm. Those homeless people had better beans there than the restaurants serve in my home town. No kidding. So don’t stress about pickled pork. Let me know if you do can the beans. I just may give it a try myself. 👍🏼

    The burner you see came from Ace Hardware. It’s rated at 19,000 BYU’s and can simmer better than my stove. And it only cost $20 I modified it a bit but it works great right out of the box. I have it connected to a small propane tank that is refillable. The whole rig is great for cooking on location too. Hope that helps.

    I did this recipe of red beans and rice and it turned out great, the only thing I didn't think was great was the pickled pork. The pork had the same taste as just adding plain pork. Did I do something wrong or is that the way it is?

    My family always used pickled pork. All that being said, I volunteered at the New Orleans Mission one weekend. We fed homeless people. That day the chef cooked red beans and rice. He used whole hams to season the beans. I ate some after we knew there were leftovers. Those beans were delicious. So to answer your question did something go wrong. No. It’s all a matter of how you like your beans. I love smoked sausage in my beans too. So I’d say use regular ham and smoked sausage. Then you’ll know what flavors you like. One day a neighbor brought me a sample of his red beans. I thought they were outstanding. After comparing recipes, I learned he was using 1 thing I had not used. A small can of Rotel tomatoes. Talk about make a difference. Just try making the beans a couple of different ways. Then you’ll know how you like them the most. Enjoy!!

    @@TheSandersKitchen I did love the taste of the red beans I just expected a different flavor in the pork itself. I used ham also and smoked sausage. It was a great dish and will make it again. The pork was tender and maybe I didn't pickle it long enough. (5 days)
