Louisiana Style Red Beans and Rice Recipe - This is a classic style red beans and rice recipe that is really easy to follow and packs that authentic down in the bayou taste! This is a must try!!
Ingredients
1 lb. dry Red Beans or Kidney Beans
2 tbsp cooking Oil
14 oz. Andouille sausage
1 Yellow Onion
1 Green Bell Pepper
3 Celery Stalks
4 tsp minced Garlic
2 tsp Smoked Paprika
1 tsp Dried Oregano
1 tsp Dried Thyme
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Cayenne Pepper
1/4 tsp black Pepper
2 Bay Leaves
6 cups water
1/4 cup chopped fresh Parsley (dried will work)
1 tbsp salt, or to taste
3 Green Onions

    I'm over 60 years old grew up in SE Texas and have made beans this way my whole life. I have a suggestion though. If you will wait to add your salt until the last 30 or 45 minutes they will naturally soften to where you get the texture you want just by cooking and maybe mashing a few against the side of the bowl just for fun. By adding salt at the beginning you increase the boiling point of the water, and you make it difficult for the beans to soften, which is why you are pulling some out and mashing them in a bowl. Having a lower boiling point causes the beans to roll, which helps soften them.

    My grandma passed away last year and I wish I had this recipe from her. She was born & raised in Louisiana. Ive been trying to make a lot of Louisiana recipes just to feel comfort. I’m going to make this tonight using your recipe since I just searched on YT and your video popped up. Thanks for making it look so easy!     Make some buttery crusty biscuits (U.S.) and some southern style fried chicken (buttermilk deep fried preferably) to go alone with it. If you like sweet tea, that's also normal.

    The beans look PERFECT, AB. I always add a little less water; 4 1/2 to 5 cups. That way I don’t have to smash my beans for creaminess. One less extra step. I’m lazy! 🤣 I learned from my Creole grandmother. She also added a little butter at the end. God bless, and love your channel.

    Ppl don’t believe us when we tell them our ancestors really let us know when to stop seasoning something. My son(15) had asked me how much seasoning to use when he was making Rasta pasta, I said your anchestors will let you know, just listen for the “enough my child” 😂 I was dead serious too.     Excellent video. I like that you cook the sausage separately, and then add it back at the end. Lots of other cooks leave the sausage in the whole time. Since Andouille sausage usually comes fully cooked in the package, I don't want it sitting in the pot for a couple hours. I do put in a ham hock, just because the meat on the hock is the tastiest part of the pig. To mash up some beans to release starch, some people just smash them against the side of the pot. I like to use a potato masher right in the pan. I don't know if it is traditional, but most recipes call for a little cumin, which I personally like. Keep up the good work!

    #LouisianaGirlHere: Your beans will cream if you cook them medium/Low for about 4 hours! Yes I know everybody does not have that kind of time, just know a Crockpot is an awesome tool for beans when time is a issue!

    His way is a good concept but the key to creamy beans is the water level over the beans "Not to much water" and cook it down !!!!

    Revisiting this video again, two months later because yum! My grandfather never wrote down his recipes and hated kids in the kitchen. 🤣 So by knowing my grandpa’s seasoning profile and learning your techniques I’ve been able to get it so close! I’m trying this with chicken stock this time to see if that’s the ticket. Thank you so much! You’re straight to the point, no flourishes, no fluff. Right down to business and I’m here for it!

    This video inspired me to take my first attempt at making red beans and rice. And I'm pleased to report that it was a big success! I didn't make any tweaks to the recipe, although I only had crushed bay leaves so I skipped that part. Took quite a bit longer than advertised to sufficiently thicken up at the end, but I'm glad I stuck with it. I think next time I'll probably try mashing a greater amount of the cooked beans as that should speed it up a bit. Anyway, thanks AB for the recipe and video. This will definitely be a part of our regular cooking rotation!

    I loved how you browned your sausage in the beginning, but then left it out till the last 15 min. of cook time!! This keeps your sausage nice and juicy, versus how it can get dried out when people cook it with the beans for hours.. EXCELLENT Recipe, AB!! ❤💋

    I spent almost 20 years in Houston, and through some friends from La. was introduced to Cajun. I now own a restaurant in Iowa, and will be using this recipe for our weekly special! I haven’t tried it yet, but by the ingredients I can tell it’s gonna be great! Thank you.

    When I had to “fill in cook” at my restaurant on Mondays, I made a ‘hurry up’ beans and rice; this looks way better, can’t wait to try it. BTW, we Calle onion, celery and green peppers the Cajun Trinity and onions, celery, and carrots (Mirepoix) the French Trinity.

    The Trinity plus carrots is called the Mirepoix in French. My grandma was from France. She had a bunch of Cajun French friends and it to make me smile when she talked to the Cajuns in French. Anyhow, Cajun/Creole food is the best from African recipes mixed with the best of French recipes. Absolute magic. She would joke that the Cajuns would call it 'Mirrowquauy'. Same delicious combo. Keep cooking good food bro.

    Almost. The Trinity MINUS Pepper Plus Carrot is Mirepoix. The French dont use green pepper at all in their veggie base for soups and stews. The legend is that when the French came to Louisiana, peppers were much abundant and easy to grow here, and in-turn it quickly became a replacement for carrots in their mirepoix. Hence, the trinity was born.

    I made this in an Instant Pot tonight and it was great! 4 cups water is about right for pressure cooking. I doubled the cayenne.

    My husband and I were first introduced to red beans and rice while he was in college in Baton Rouge in the mid 80s. We are Yankees from Wisconsin and had NEVER heard of it. We ate it while living there for 4 years and sort of forgot about it (sorry). I saw this video and decided it was time to resurrect it. WOW!!! Can’t believe we wasted the last 40 years without it!     I'm making this today. Great recipe and yes it needs the green onion garnish for that oniony crunch. The best bean dish of all, Louis Armstrong knew his stuff.

    Loved it. When I tell you it was fire, it was FIRE! Water works just fine. I always used stock but water is perfect as it doesn’t over power the beans!!

    I definitely made these beans, and I just wanted to say that they are everything you said they are. They were totally delicious. I made some home made butter biscuits, Oh my God, talking about delicious they were on point! I chose yours because of the seasonings that you were using I added just a half spoon of creole flavoring and it made it soooooooo good, thank you
