Red Bean Paste Buns 豆沙面包

Ingredients for sponge dough (中种面团):
210g (1 1/2 cups) bread flour (面包粉)
1 tbsp caster sugar (细砂糖)
1 tsp instant yeast (即溶酵母)
125ml water (水)
Cover and leave to proof for 2 - 2 1/2 hours
盖好,让它发酵2至2 1/2 小时
Main dough (主面团):
70g (1/2 cup) bread flour (高筋面粉)
60g (1/2 cup) plain flour (普通面粉)
1 tsp instant yeast (即溶酵母)
50g (1/4 cup) caster sugar (细砂糖)
1/2 tsp salt (盐)
1 egg (鸡蛋)
1 tbsp sweetened condensed milk (甜炼奶)
30g (2 tbsp) butter(牛油)
250g Red bean paste (豆沙馅)
Some white sesame seeds (白芝麻适量)
For glazing :
1 egg (鸡蛋)
1/8 tsp salt (盐)

Coincidentally, i was just wanting to make some red bean paste buns and was looking for a good recipe yesterday. I love your recipes and im so happy you posted this! Is it okay to omit the condensed milk and replace with something else if i dont have condensed milk? And i dont have a stand mixer... i will have to knead by hand :(
