08:15 Mexican Chicken & taquitos prep
Corn tortillas
frying oil
1 whole chicken
11 cups of water
1 onion
3 green onions
1 leak
3 bay leaves
1/2 garlic bulb
1/2 oz of dried epazote or a fresh bunch (Alternative: Cilantro or flat-leaf parsley)
1/2 Tbsp of salt (I like it salty with 1 1/2 Tbsp of salt- Please adjust to taste)
*pressure cook for 45 minutes with a slow pressure release

03:44 Easy refried beans
1/2 onion
1 serrano or jalapeño pepper
4 cups of pinto beans (freshly made or 2 20oz cans)
3 Tbsp of beef tallow + additional 3 Tbsp Hot to pour into beans (alternative: Oil of choice, lard, vegetable shortening)
1 tsp salt (please adjust to taste)
05:55 Easy Mexican rice
2 Tbsp of oil of choice
2 Cups of long-grain rice
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
8oz can tomato sauce
3 1/2 cups of water ( I use less as suggested to prevent mushy rice; Unless you live in an arid climate)
1 Tbsp chicken bouillon
Optional for Extra flavor a spring of cilantro
*cook for 18 minutes on med heat then turn off and let sit for 5 to 8 minutes
*once cooked you can fluff with a fork leave the lid off a few more minutes and serve Corazón
06:54 Mexican refreshing drink
12oz mineral water
Dashes of Valentina hot sauce or use your favorite
1 tsp guajillo chili powder (skip if you don’t have access to it)
A few sprinkles of tajín
Juice of half lemon or lime
Ice
*This drink will help you stay hydrated during the HOT Season 🥵

As always, the food looks amazing. That was a cool trick joining to tortillas a longer shell. Of course, that means you can fit more good stuff inside!
I remember a restaurant that closed over a decade ago called Mission Trujillo southwest of Denver and they had an appetizer they called flautas. Mexican seasoned steak wrapped in a corn tortilla cut about 1 inch long, pan or deep fried. They were absolutely delicious.
