Re-sharpening hard-to-cut Honyaki knives [Futamiura Kikuichimonji]

I would like to tell you how to re-sharpen a Honyaki knife and how long it takes. I finished it while using it, and finally polished it with waterproof paper and compound.

    期待を込め評判の良い人造名倉を購入しましたが効果云々以前に柔らか過ぎて、なんじゃこりゃでした🤣 直後に所有する層とは別の純三河白名倉を追加購入しました。 研ぎ心地が僅かに改善されてGoodです🙆🏻 黒幕1000が残り3mmなので私も追加購入しました。 他社の1000番も検討しましたが黒幕へ戻る予感がしたので同じ黒幕にしました。

    そうですね… 出来なくはないと思いますが、片刃である事や刃先の尖り具合など諸々、仕事で使う場合はやはり用途に合わせた包丁がオススメで使い易いと思います。 ちょっと切る位なら大丈夫ですかね☺️
