Things I ALWAYS do to improve my Japanese curry: 1) buy the Java (best imo) or Vermont curry brands, they taste more rich and flavourful than the standard golden curry, 2) caramelize the onions, and add even more onions at the potato + carrot stage so you can see bits of onion in the final dish, 3) add grated apple and cook it down with the other veggies, 4) use good quality beef or chicken stock if you have it, 5) finish with a few knobs of butter, 1 tbsp each of ketchup, soy sauce, and Worcestershire sauce (or even better - Japanese Bulldog/tonkatsu sauce) and adjust these to taste. Some people even like to add chocolate or coffee to deepen the flavour! These additions will truly make your curry taste and look like the restaurant quality curries you find in Japan!

I grew up eating Japanese curry and it is truly a national icon. There is so much culture around curry in Japan. It's a staple dish when you go out camping, as it's a simple dish that everyone can help make. And because it's so dead simple, pretty much everyone has their own version, with different regions and prefectures adding their own local vegetables to make a version unique to their area. And because it's such a reliable dish that's frankly difficult to mess up and fairly healthy, it's one of the main dishes served at schools and during disaster relief.

Every Japanese has a word or two about how to make curry rice. Of course it is all about the meat and the brand, but each person has his or her own secret condiments. For example, soy sauce, Worcestershire sauce, fruit, honey, and some even add coffee or chocolate. Anyway, I am very glad you enjoy Japanese curry rice! Keep up good work!

Since I've made curry for Christmas I eat it every day now (made it again after it was over). I'm obsessed. The pre made pack is too expensive here, so I just make the roux myself (takes 5 minutes), like my grandma taught me. Since then I've tried again, thickening with corn starch. It worked great, but I still prefer the result with the roux.

I love Japanese curry rice, I make mine with ground beef but otherwise it's pretty similar to how you do it. I have also put mushrooms and beets in with much success and I've had it at restaurants that had peas in it and it was good. I also like to layer the veggies in the pot in order of what needs the most cooking so mushrooms/onions, carrots, potatoes and then pre cooked beef on top and I also do the entire veggie cook/simmer with the curry mix already in instead of adding it at the end so that everything is nicely infused with curry goodness.

Japanaese curry seems really similiar to what we make in Kerala (south india) called kerala beef curry. I think the main difference between the two is use of spices. Our curry has so many different spices and also we add coconut milk and ghee to thicken the curry. Ofcourse, Japanese curry has its root in indian curry

There is a missing link in the creation of Japanese curry that is often not discussed and that is the British Royal Navy. When Japan was building its modern in the late 19th and early 20th century, it looked to Britain as the strongest navy in the world and copied everything it could. This included food, and Britain adopted ingredients and recipes from its colony in India and modified them for use in the Royal Navy. The Japanese then took this new British curry and spread it throughout their own navy to fix their malnutrition problems.

The Japanese industrialized the curry making process. Those curry cubes of contain dozens of ingredients and each brand varies. But the classic Indian spices such as the gram masalas, cumin, coriander, tumeric, chili, fenugreek are there along with Japanese changes (to suit the milder Japanese palettes) adding peanut butter, apple/banana puree, chocolate and self contained with ingredients for longer shelf life such as vegetable shortenings, flours, and sugars

Don't need the salt. Just replace with a dab of soy sauce. Don't use potatoes that's just filler. Replace with mushrooms. Don't add meat, replace with a generous portion of pork katsu, or if you want to go crazy, do a combo of shrimp, pork, crab cake katsu. For the rice, prepare like the Japanese, short grain rice, wash rice until clear water drains out. Pour into the rice cooker, add the appropriate water, drop in a thumb size piece of dried kelp (konbu), optional but adds a nice bite to the rice, a thumb size piece of dried sheet agar, let sit for half to one hour. Cook. When done, immediately open the rice cooker and gently lift, fold, and fan (yes blowing air) the rice to fluff, add air, and gloss the rice. Serve rice, katsu, with sweet pickled baby onion things, finely shredded cabbage topped with carrot ginger dressing.

Nice curry, but just some tips: Half a carrot, half an onion.1 mediun size potato 200g meat per 1 packet. so, for the curry you made you need to double your curry cubes.(that is why it was a bit watery) Also, you want to use a bigger pot so you can take the scum easier lastly, better melt the cubes first before putting it into the pot. This prevents the cube from just sinking end burning at the bottom of the pot. Anyways, great job! (side note: you can add some cumin/garam masala in the end for better flavour)

  • @Chiburrotube

It will be interesting when you rate Iceland's national dish. Officially, it is hákarl, a cured Greenlandic shark . It has been eaten since Viking times. I personally don't think it fits your description of a national dish. People eat it during certain special occasions, but it is not something typically eaten as a typical meal at one's home. My suggestions would instead be for kjötsúpa (traditional meat soup) or plokkfiskur, a tasty fish stew or hash.

@boo does a great job of covering most of the options to further improve the great taste of Japanese curry, but of all @boo's suggestions the simplest is the most important--caramelize your onions and then add at least one more onion roughly chopped when you add the potatoes and other vegetables. However much onion you think you need try doubling it and be amazed at the improvement. Another Pro-tip; I have frequently seen Japanese people clean out their fridge of every bit of leftover vegetable and meat and add it to their curry with great success.

I keep making it for my friends and since its always so much and cheap to make, i keep freezing portions for when my need for comfort food hits. i enjoy putting in some sour apples and dark cocoa depending on the mood. One day i want to try it with fish instead of meats.. its such a forgiviing dish, you can mess it up as you want... itll always turn out okay after a bit experimenting. ah anyway, I love it so much and one day i want to try an authentic japanese curry somewhere haha

If you try Indian don't even take think about taking 'kichdi' according to google. I believe biriyani is the unofficial non veg national dish.

Add some Hot Honey to your curry at the end for extra flavor, i also prefer Vermont! Kimchi is a perfect pair which you already did :-)

Damn, it's so weird that Japanese Curry is Japan's national dish considering it's not what you'd think when you think Japanese food. I can give this to a commoner and they would never guess Japan.

It did not originate in Japan. But it's very common there, and the countries around it. My country's national dish also originated somewhere else.

カレーライス or Kare raisu indeed is very popular in Japan, anyone can eat without worrying about allergies. I LOVE Japanese food. BUT. I'm from Peru and I didn't find any Peruvian dish in this channel 😢. For example Peruvian Ceviche, Lomo Saltado, Ají de gallina, Causa, etc 🤤 I will subscribe to the channel after I see some Peruvian flavors here 😊🫣
