Ranch Style Sweet Corn Gorditas

This recipe holds a special place in my heart as it brings back cherished memories of my grandmother and mother. They used to prepare these gorditas during the holidays or when the weather was chilly, using an outdoor oven, much like the one we used to cook our Thanksgiving turkey this year. Alternatively, as shown in the video, one can use a griddle or skillet.
With the given amount of ingredients, I made around 40 gorditas. For a larger crowd, use the exact amounts or halve them for a smaller batch.

8-10 Lbs Or Prepared Masa
One Lb of Queso Panela
One Lb of Queso Fresco
16 oz of Jocoque or Crema Mexicana
2 Cups of Sugar
2-3 Tbsp Baking Soda and Baking Powder
1-2 Tbsp Ground Cinnamon

    Sorry to hear about your mom. Dementia is tough on the person and the family. Ive read some great articles on dementia on being helped greatly with good fats. The brain needs "healthy fats" to work optimally. Coconut oil is a good one. Maybe cook with it sneak it in with egg preparation for breakfast or salad dressings.

    Thank you so much for those suggestions. Green tea and greens are also helpful. She has been eating salads but eggs are a no for her, because she ate them so much growing up.
