Do they have to set them up/take them down every, single day!?! That seems almost cruel of the city (I assume it's due to by-laws) Still...incredible dedication. The Japanese work ethic on display. Wonderful job of filming/editing, imho. Thank you for this outstanding video. ☮

The Yatai vendors are licensed by the municipal government. The vendors pay rent for their designated spots and are subject to health inspections. As part of those regulations, the stalls are required to be assembled and disassembled each day. This regulatory structure functions as protections for the small business owners and the local Yatai culture. It prevents large operators from displacing the small businesses.

In Japan, the Japanese word for Offal, which is "Horumon" has become associated with the similar sounding English word, "Hormone". The term actually refers to the Offal (organ meats) from Beef and Pork - which includes Liver, Kidneys, Tripe, and Intestines.
