    For noodles (gravy style), we put more water, more oyster sauce, sugar, dark soy sauce, mince meat, chopped shallots, shitake mushrooms (slices), chopped fried garlic, sugar, light soy sauce, little chicken powder, white pepper powder.

    小時候吃北方炸醬有些差異,沒香菇有碎豆干末,但現在少有加豆干末有豆干丁。這視屏更像滷肉只是多了黃豆醬,然香菇應先煸出香味再加蔥蒜,少有加薑。肉與香菇、蔥蒜應該分開煸煮,再全部加醬拌煮收水。

    香菇頂多只有培養用的木屑,清洗一下即可,泡水也只需5~10分鐘,泡久了味道就全跑掉了

    乾香菇5~10分鐘肯定沒泡開,你應該沒煮吧!味道跑了是你用熱水泡,你如果改冷水泡就不會跑掉。而且泡水量不能過多。

    先煉香料油,然後再拿這個油炒肉末,這就不會影響了。很簡單,而且多煉一點還可以留著使用,不用多出的辛香料給浪費了。
