Just went back and re-watched the other version you mentioned. That was right around the time I subbed in fact ;) That one still looked good but it's cool to see you post this again. I think it shows people that are just starting to learn to cook that even trained chefs update their recipes over time. Nothing ever has to be by the book. You can tell the addition of the red wine deglaze and worcestershire in this one really take it up a notch. Good job as always!

I like pumpkin. It looks like it lends very well to a stew. It's also nice to have another pumpkin recipe. The only one I have now is for pumpkin soup, and it's a little blah if you ask me. I gotta break my crock-pot for this one though Julie. Top shelf stuff. :)

Loved the 1st video of this stew. Just finished watching, because it is on my menu for this week. The thickness of the gravy was perfect for me. Oooo.... You said short-ribs as I was typing!! Yum.... I may try that. Thank you.

I'm a fan of pumpkin anything! This is a great recipe. Naan would be perfect with this. Herbs & spices wd. be tricky for me with the different flavors already in there. You have the spice combos down to be balanced perfectly. One of my fave things about your vids.

Loveeeee this idea. Going to make it Monday! Can you do a video or quick explanation on how you break your pumpkin down. Like how you get the skin off (I'm assuming it's done like cantaloupe.. But have never done it lol).

Yum I love pumpkin but I've never had it in my stew before but I can't wait to try it out. I know its a little unconventional....... Maybe,,,, lol but you can try adding your rice on top of your stews, soups and gumbo and it really keep your rice better, to me anyway. I know many people may not do that but just a little tip. My Mommie think its sorta odd but idk, works for me. Thanks Julie...

You could use a pressure cooker, but then there would be no video to watch. I can't stare at the video of the top of a silver colored lid for 5 minutes watching it steam!

I do like beef stew. But have never added pumpkin.

sounds terrific! I'd never thought of pumpkin in a stew. Great idea, nice change up from the usual potatoes. do they hold their sweetness or does the cider vinegar change their flavor?
