Pumpernickel is one of my favorite breads of all time and I was reminded of my old recipe when I was messaged by a viewer, Babsi Schafer, who had been watching another of my German recipes Bretzels - • BRETZEL RECIPE - Soft ... .
** I have been told that the Wikipedia says "Bake for 20 Hours" and don't use Yeast use Sourdough Starter, (which is actually yeast) Otherwise it's not a Pumpernickel.
Rising with Sourdough over 8 Hours and then Baking for 20 Hours just isn't conducive with modern Baking, SourDough Starter is just a Natural Yeast, as is Bakers Yeast, My Recipe is designed to help the modern Baker Produce, as close as possible a Pumpernickel, in a fraction of the time.
I do appreciate those wanting to point out this is not a True Pumpernickel, However, Please judge after you have tried it. If you wish to spend a kings ransom on Gas or Electric cooking a 1450's recipe for 20 hours please feel free to do so.
Almost (note I say almost) all commercial Pumpernickel have dispensed with the SourDough Starter and use a combination of Bakers Yeast and Citric acid it gets their piquant flavor, I prefer using cocoa and coffee to a similar effect.
I hope this explain my Theory. I am not right, for I am always learning but this is a damned fine Pumpernickel in my eyes.**
You will Need
200g / 7oz of Strong White Bread Flour
120g / 4oz of Wholewheat Flour
100g / 3.5 oz of Rye Flour
3 teaspoons of Dried Active Yeast
1.5 teaspoons of Salt
3 tablespoons of Dutch Processed Cocoa Powder
1 teaspoon of Ground Coffee
1 tablespoon of Carraway Seeds
270ml / 9 fl oz of warm Water
1.5 tablespoons of Vegetable Oil
3 tablespoons of Molasses
Bake at 200/220C or 400/425F for 30 Minutes

Steve I found your channel because I was looking for a good pumpernickel recipe. Your recipe seemed very interesting. I just wanted to let you know I gave it a try and it is fantastic! Gretchen Loss I have not made this lately so I do not remember the exact time. But when I bake bread, I take the temperature, which is usually determined by the type of bread. Sorry, we had to cut down on carbs due to husband’s diabetes.

I'm going to try this, it looks so good. I used to go to town in Karlsruhe with my Father on Saturday. We would go window shopping to little shops. He'd have to take me inside when we saw the sausages hanging in the window and smelled the bread baking. I love the dark flours with so much flavor in the bread.

Dark pumpernickel has been my favorite bread since I was a young child (and that was a long time ago! Ha). Thank you Steve for sharing this recipe. I really look forward to making this wonderful bread, but want to bake it in a dutch oven.

A Dutch oven will allow the steam that comes from the bread itself to stay in the air over the bread as it bakes, resulting in a lovely crust. I take the lid off for the last 10 minutes of the baking.

Thank you so much, pumpernickel is my fave bread alongside sourdough. This bread tasted so good, I substituted molasses for dark brown sugar and no caraway seed or coffee. And it still tasted great!

Looks great Steve. I’ve made this previously, using the no knead method, which means higher hydration, less yeast baked in a Dutch oven. Im just not one to knead dough.....lol. I’m still making your baguette recipe which I love.
Best bread I've ever ate, no more dull bread from a supermarket for us :)

My Oma puts cocoa in her pumpernickel every time she bakes it! Never tried coffee before, though. Will have to give it a whirl! Love pumpernickel. I particularly enjoy spreading some Leberwurst on it, sometimes with a little bit of homemade mustard!

Hello Steve, I have tried your bread and I am happy about the results although I did not use coffee as I did not know whether it was coffee or nescafe. I did not have molasses and I used tamarind instead. The result is quite satisfying and I am looking forward to trying another loaf. So, thank you very much for your tutorial.

Beautiful loaves but I was taught by my oma to slice thick & spread a good amount of sweet butter. Oh so good!
I have used a very similar recipe for a lonnng time and I love it. The only thing I like to add is a couple teaspoons of fennel - and can you ever have too much Caraway seeds? I think not :). I usually use a heaping tablespoon of Caraway. Also, I am not sure about using coffee beans - I always use espresso powder - excellent! I very much enjoyed your video - thank you for taking the time to produce it!

i have used this pumpernickel bread recipe of yours for quite a few years and my family loves it. there are always critics. there is no way i'm making bread with just flour & water. YUK!! i love the richness and all the flavors of your recipe. i don't have 24 hours to bake! i'm sure those people mean well though...

Hi Steve. This was such a great recipe and your presentation is clear and easy to follow. I tried making a loaf and it was wonderful! My wife, who loves pumpernickel was in heaven. I have to admit I wanted to follow your instructions exactly but I chickened out about using the coffee. Could you please explain what you are using? Is it ground up coffee beans? Or instant coffee? I have never heard of that before. Even without, the bread was delicious! Thank you so much for making this video!!
Pumpernickel is prob the best bread! I even like it slightly warm with a little bit of creamy butter spread on top.
I stumbled across your channel because of the rainbow bagel video. I love your jackets. I appreciate all of your recipes and tips. In the US, there is a restaurant called Ruby Tuesday. They have a pumpernickel crouton. It is crunchy and then becomes chewy. You should definitely try them!

Finally a pumpernickel recipe that doesn’t require a rye starter! Looks great and I’m excited to try this. One question - does the grind on the coffee matter? I’m guessing that a fine grind would do but should it be more like an espresso grind? Thanks.

Thank you for posting this recipe. I will try this as an alternative recipe to my usual sourdough-type long-cold-fermented rye pumpernickel. (I developed my recipe from the rye bread recipe in the 1964 Joy of Cooking; I use commercial yeast in small amounts and allow for very long fermentation/raising at either cold or cool room temperature.). But this recipe would be much faster.
Hello darlin'.....I am making your recipe, as we speak. It is proofing, in the oiled bowl, right now. I did something different. I created a "poolish/sponge" using the yeast, water, molasses, the Wheat Flour, and a 1/2 tsp Sugar & let it fulminate for 15 minutes, while I got the dry ingredients together. That poolish was HUGE and beautiful...lol. I poured the poolish into the dry ingredients, then added my Olive Oil, and mixed all till well incorporated. I hand I needed it for 10-12 minutes, and it is now proofing. I did grind my Caraway Seeds, as I can't ingest seeds or nuts, like that, as I have Diverticulosis from standing & wirking in Operating Rooms.....lol. The smell is amazing with the seeds ground, and you use less, so as not to over power the bread itself. I'll let you know how it turned out....yum! Thank you for your recipe! Good job!
