Cubano Pork Loin
Ingredients:
- 1 Pork Loin
- 10 Slices of Ham
- 10 Slices of Swiss Cheese
- Fat Daniels Spicy BBQ Rub
- Angus and Oink Cuban Rub
- House of Q - Gold Mustard Sauce
Grill Set-Up & Tips:
- Fill up the firebox with unlit briquettes
- Fill up a chimney starter 3/4 full, with briquettes
- Place the lit briquettes into the centre of the firebox on top of the unlit briquettes. (This is known a the minion method.)
- Place 2-4 chunks of smoking wood inside the firebox. (Depending on your smoke profile)
- Place the water pan filled with warm water into the grill. (It is easier to use the stacker system to do this.)
- Place the second part of the stacker system and dome in place.
- Set the grill temperature for smoking. Anywhere between 225f and 350f (depending on how much time you have)
- Just before the grill is up to temperature, place Pork loin in the top rack.
- Smoke anywhere between 45 mins to 1.5 hours depending on your grill temp.
- The pork loin is ready when the internal temperature of the pork is 160f

    I was interested to see how is he going to get to that 150C. This seems to be impossible with that smoker if you want to use water pan, unless there is 40C outside.

    Don't use water or sand, just cover the pan in foil.

    Sorry guys , so many wrongs here . Too much water in the pan . Charcoal not enough or hot enough . Meat looks anaemic and the internal temperature wasn’t high enough to melt the cheese . 😔
