Remember, this is the same guy who seriously thought it was a good idea to go on a podcast and, without any regret, talk about when he choked his son nearly to death. Search “Sunday evening coffee episode 6” and start watching at the 27- or 28-minute mark and… enjoy? Oh, and what he says starting at around the 51-minute mark ain’t no better.

@Zguy09 not only did he brag about that, but then he went on to say that he kicked him out of the house hoping that he would have to sleep on a park bench and them come crawling back to Jack to apologize. Jack was upset that instead of being homeless, his parents took his son in to live with them. He basically disowned his son after that even telling the younger son that he had lost his brother to drugs. Remember, this was a teenager who was just smoking a little green. Jack tells that story of an example of how good of a Christian parent he is.

I love Jack's premise that he is supposedly _teaching_ *you* how to make this. Step 1: Leave a smoked brisket in your freezer for a year wrapped in tin foil. Step 2: Fill a crock pot with a bunch of cans and jars of vaguely Tex-mex stuff. Step 3: Accuse everyone else of cheating. Step 4: Vomit.

Perhaps we should be questioning the validity of the smoked brisket.....regardless of its age, it doesn't look like it ever got properly cooked!
It gets even better when you realize that he said he cooked that brisket a YEAR prior to making that chili. That brisket had a shine to it, probably because it was freezer burned from being in a freezer for a whole YEAR.

In professional kitchens you get 3 months on frozen meats before they have to be discarded. His brisket was 4 times the allowed time and then he fed it to a bunch of church goers. This is why I don’t trust potlucks.

@@troyn3073I have a compromised immune system & I CANNOT do potlucks for this exact reason (that & people's lackadaisical attitudes towards kitchen hygiene.) I'm honestly surprised that Jack hasn't gotten the people that he has served, & have purchased his sauces, very sick Jack just wrapped that brisket in tin foil, chucked it the back of the freezer for 15 months, & completely forgot about it until it was time to serve it to 30+ people at a church chili competition It's willfull negligence imho

I've won chili cookoffs. Jack is right, I cheat. My secret is that I make my own fresh chili spice mixture.😁 After browning cubed chuck, yellowing onions, adding garlic and diced jalapeno, 1.5 tsp cinnamon, I mix in my spices. Then I deglaze with a lager beer, before simmering with beef stock and tomato sauce. I have noticed people who don't place are like Jack: barring musty old beef, they just mix in processed/canned food.

Made from fresh always tastes better than canned, whenever I make Stifado (not remotely authentic, very much an American ruining Greek food) I use 90% fresh and only ever use stewed tomatoes for extra acid, not that it needs much.
"Probably the hardest thing we're gonna do is cook our sausage" No Jack, the hardest part is hiding the evidence against you when the people at the cook-off start dying of food poisoning. But to be fair, considering his history with other meats he may have had a point with that statement.

I’ve had diarrhea from not heating up my leftovers from say 2 days ago and know the consequences of eating but that’s huge difference from 2 days ago improperly reheated food and a 14 month old hunk of pork

@@wolfetteplays8894 Not if you're old or otherwise weak or immunocompromised. It's rare, but it happens. According to the CDC, 140,000 people per year are hospitalised in the US due to foodborne illnesses and 3,000 die.
I'll tell you what if the whole church getting poisoned by a chili bowl competition it's either Jack cooking or someone made it too spicy.

Three days ago I endep up at the hospital because of food poisoning. Awfully painful, I don't wish that to anyone. (It was my fault, I ate something from the fridge that still tasted good but wasn't fresh enough. Can't blame anyone but myself, I don't have a "Jack" to pin it on...)

That brisket was crystalizing. It was in his fridge for so long it was literally growing tiny crystals
I'm gonna be honest. At first I was on the fence about you (like a year ago), but you started to grow on me. I watched more and more of your videos and you've become one of the few channels that I watch regularly. The fact that you now "revealed" that you play video games cemented my appreciation of you as one of the best people on KZread. I can't really explain why, but to me it made you more "real" than every other chef here, more relatable so to say. When I was younger (circa 80’s), I used to get hold of those Italian horror films. The ones which were banned by the UK government for being “video nasties” and suspected snuff films (they weren’t). They were some of the most depraved, horrific things, I’ve ever seen…and they’re STILL not a patch of Jack’s videos!!!!!! Stay classy, Mr James… 😂

Jack should be proud of his chili. Even though he didn't win first, second, or third, he defied the odds and managed to not have his video be part of a negligent homicide deposition. Also who the heck puts corn in chili? That confuses me almost as much as that brisket that's old enough to start teething.

I've long hoped that Jack just means that this brisket is like the one he made the year before, but how much of that can explain the anomalies?

This and the "still kickin' chicken" are Jacks magnum opus.
Fallout is possibly the best ever video game adaptation. Whole cast is good and Goggins had better win some awards.
Not only is Jack a terrible cook, but he has also been exposed as a child abuser. There is a video showing him talking about choking his son, as well as excusing it as being "discipline".

Actually, for the brisket, it's not just oxidation. That is a 18 months old cooked brisket which was kept in a freezer with only aluminum foil to keep is "sealed". The white spots on the bottom of that meat? Mold. So yes, by far, the brisket was worse than the canned produce.

@@Corvx If it's a freezer like what you have with a fridge, there is actually a de-frosting cycle, which is made to prevent ice build-up inside. So yes, over the course of a year and a half, mold can develop in a perfectly fine freezer.

@@MissTwoSetEncyclopedia There's something called the Dunning-Kruger effect and I think that's what in play here. Basically the less a person knows about a given subject, the more likely they are to overestimate their abilities in it. Basically Jack knows very little but his ego won't let him admit this, hence why he says he's an amazing chef. It really is fascinating and horrifying to see it in action.
I feel like there are some things even love can't fix.
I didn't see chili powder or seasonings other than salt and pepper. That jarred garlic is crap too.. he could have used at least fresh garlic. Thanks for the video
One of my neighbors makes a really wonderful black bean chili that starts with smoking the beans for 12 hours using specific types of wood. The sight of these plain canned beans slopped into the pot is just sad.

That sounds really good. The least Jack could have done was wash the beans to get rid of the can juices, those really ruin the taste and consistancy of any dish they go in.
The most concerning thing is that the brisket bark was sparkling
This brings up a memory of how one of my friends won a church chili competition. The best thing was that he is Milanese, didn't know what chili was (he only knew it had ground beef and beans), made up his own recipe, and WON!

I prefer food contests that are judged by the public. I entered my pumpkin chili in a church chili contest and snd didn't win, but i know people liked it and that's all that matters.
The first time I watched Cooking with Jack Show was from a channel called August the Duck where Jack was making wet and dry brine chicken and the way Jack made it was so bad, I don't want to give spoiler, you must see the video from Jack's channel on wet and dry brine chicken.

No one will be able to comment on what Jack's chili tasted like. None of them survived, except for Jack, who has trained his stomach for many years to be able to digest his cooking.
Hahaha I entered a chili cookoff once. Did lots of research, spent crazy money on quality, fresh ingredients, and slaved over it for hours. Everyone who tried it said it was amazing. Brought like five gallons to the event, and folks devoured every drop. The ?impartial? judges awarded the prize to a ground-beef chili that tasted like sloppy joe mix. And this was in Texas (a college event, not a professional cook-off). So I kind of feel Jack's pain, but at the same time, his "chili" was a crime against humanity.
There's something about this particular Jack video that just blows my mind more than the others. Like, if he wants to cook and eat his own bizarre creations is one thing, but he shows here he has no problem taking out a green, full year old brisket and being like "yeah this is the thing everyone will love".
When you said that it was something a Ghoul would eat, i laughed from my belly. Funny but more importantly, informative. Thank you sir

If I remember correctly, I believe that brisket is one he had frozen for 14 months. I wouldn't be comfortable eating frozen meat after a few months, let alone 14.

if someone tries to make jack's chili recipe do they have to freeze the brisket for a year first? I would imagine that the people who won the chili cookoff probably used mostly fresh ingredients (like real onions, tomatoes, peppers, garlic) opposed to cooking 1 singular ingredient (and using a previously frozen one). and for the fallout show stuff, absolutely loved it. Probably one of the best adaptations of a video game to a show ever, not that that is a high margin sadly. For any fans that either fallout3 or new vegas is their favorites, gotta suggest the tale of two wastelands mod, it takes all of fallout3 and loads into new vegas's (slightly improved) system and you can play both with one character.

I have actually tried to use leftover smoked brisket (from one day earlier) to make chili. It didn't really work. The problem is the brisket is already tender and is just going to fall apart while stewing. Also, the bark from it clashes with the flavor of the chilis. Maybe it would be different if I left it in the freezer for a year.
He's bragging that he isn't doing anything! Canned beans. Jarred salsa. Canned tomato paste. Even preminced garlic! I still think he's spoofing us. To quote John McEnroe "you cannot be serious "

The leftover meat is very concerning to me because I would usually cook the meat as soon as possible or I would cook it a few days after so it wouldn’t expire. The number of memes in this video makes it 10 times funnier and it made me forget about it!

For anyone curious on *good* additions to chili-Mexican style chorizo. Packs flavor and spice, and makes an otherwise average chili just that much better.
@chefjamesmakinson .... here in the netherlands we cook 'zeeuwse mosselen' with onions (to see if they are okay, onions turn dark during boiling when not good to eat), then .... when okay I add chopped winter carrots and leek .... after the mussels are all opened up (discard the still cosed ones because they were dead to start with) .... I steam them in old brown beer (mostly Heineken oud bruin, because Heineken is too sweet too drink). Serving them in the pot with the veggies and mostly with french fries/hash browns/potato crocettes. My chilli is minced beef (80-20), diced onions, kidney beans, mcCormick) chilli powder, homemade tomato sauce, (when not serving with rice, I add some potatoes) .... most of the time less ingredients is best
No technique , random flavors that have no business together, and a brisket that a feral dog wouldn't eat . This is probably one of jacks worst recipes which sad because it also had alot of potential to actually be good if he just got rid of the Italian sausage and corn , sautéed the onions and garlic a little first , then put everything else and used a way fresher brisket ( also if he really wanted sausage chorizo would've been better )

As someone who has a very sensitive stomach in an hour I would be in the hospital. I had people who did similar shite and spend ten days in the hospital , I really do hope no one suffered too much.

Glad to see you doing jack again. These are some of my favorite videos! These and the ones where you follow along a questionable recipe are great
Jack might have the strongest immune system of any human being living in a 1st world country on the planet.
If I were to make Chili... I'd get a chuck steak, give it a hot smokey grill sear on some wood fire, then throw it in the insta pot with spices and CARMELIZED veggies till it fell apart... I wouldn't use leftover frozen cooked meat, you want something that will cook and release juices into the chili. Also if you use beans, use soaked dry beans so they take on the chili flavor. Also remove the sausage from the casings! They're gonna fall off and be rubber bands in the chili.
