Growing up with a grandmother who couldn’t cook, this was on the same level as my grandmother. I loved her, but her cooking left A LOT to be desired. There is not enough ketchup, soy sauce, bbq sauce, sriracha, to bury the taste of that food.

My Grandmother was a pretty decent cook, though not of dishes I enjoyed or craved. My younger Brothers liked her cooking a lot more than I did generally. One day she painstakingly and lovingly prepared an omelet that was chock full of fresh garden vegetables. It looked wonderful and smelled great. I couldn't stomach it due to there being a tremendous amount of onion and squash in it.

To me, watching you guys, is better than just about any streaming service. Thanks. I also started watching your other videos. I loved to cook, when my daughter was growing up and lived with me, now not so much for one person. I learned to cook, from a friend who was a Sous-chef, and watching Jacques Pèpin. I even had his books La Technique and La Methode. I learned so much from those books. There was another book I had that dealt with the science of cooking; what happens to proteins, what salt does, and so on. So now I live in Italy and my good friend was a chef, and owned a few bars, and small restaurants, and finally he taught this in school, where his daughter now teaches. I’ve already learned so much about Italian cooking. Again, thank you for giving us your most precious commodity…your time.

My grandmother could not cook at all. She cooked for her seven children in a tiny cottage and everything came from a few cows, chickens and the little bit of land. She removed the spoiled parts of any food and just cooked the rest. One of the last dishes she made for me and my then boyfriend was blood sausage soup. You are not supposed to make soup out of blood sausage. It loses its texture completely (and I guess there are legit recipes for it, but hers wasn't one). :D I loved her. She was our strongest soldier (raised the seven kids on her own when her husband died after WWII), but cook she could not. Still, her kids grew strong. :D Hahah! Kay's cooking reminds me of her. Oh Kay. I have to give her credit for trying. To me it looks as if she's "learning", and I use that word sparingly, from her mistakes which is what you want to do. Never be afraid to fail. Made for a great comedy video, but was still cringeworthy throughout. I see no flavour profile other than the taste of sticky, mushy over cooked rice. At least Kay is going in a somewhat right direction and I am confident that someday she will nail it.

I think the peas and carrots are a cheap frozen vegetable the take out places can buy, it adds color and can say it’s “healthier“. I don’t mind people trying different techniques, someone could find something good. I think the basics are good to stick with, but my mom used to use leftovers to make fried rice. My mom is Japanese from Hawaii so her fried rice was a Hawaiian style with a Japanese and other Asian influences. Always came out very good. If I’m hungry, I’m still eating or at least trying it. It’s like a porridge 😂. I give Kay props for giving it a chance and for recording and posting it.

While it is always important to treat others with respect, I think the call out for people not to leave rude comments is emphasized as Kay is, relatively speaking, a smaller creator. Being featured on a channel like Nigel's isn't going to be as noticeable of an uptick in Jamie Oliver's traffic as it would for Kay. And even a fraction of a fraction leaving negative comments could drown out more supportive voices from her community. Nigel's just being careful about his power as an influencer. Great video as always James!

I actually tried to use rice I overcooked for rice pudding, and while it was edible, it was too salty for my taste because I didn't mean to turn it into rice pudding and put the regular amount of salt I use for rice. So if you're trying it at home, keep that in mind.

it's not that you can't make it happen just like you can make sushi with any kind of rice too, but you won't get the best results and sometimes you might not even make what you were trying to make. Also a big difference is that you're probably NOT filming yourself to show others how you make your fried rice on the internet, the point isn't just to make something edible through homecooking but to elevate homecooking as close to professional level as you can while also factoring in 1 important detail : people eat with their eyes first

I've accidentally overcooked rice many times on the stove. Not always on purpose... and I've learned a few things about how to save overcooked rice. If the rice turned to mush, I'd dry it out for a few hours/overnight in the fridge and then wrap them in rice paper top with a filling like spicy aioli w/ crab/chicken and shredded lettuce. Basically turn it into a salad roll.

There's one Instantpot rice recipe I've found that's perfect for fried rice without 'waiting'...perfect to use right from cooking it. Basically it uses just slightly less water than what you 'need' and it comes out as single grains JUST undercooked, like seconds from being done. It 'pours' in almost as if it was dry/uncooked. Any residual moisture (and flavour) from the other ingredients finishes it off in less than a minute...

In regards to why Uncle Roger gives a warning about not bullying Kay, but doesn't give it for Jamie, I think there's two reason. First, one has restaurants, cooking books, and calls it "authentic", while the other does it her own way because that's how she thinks it's done, while also saying that it will be done her own way, and she does it because she likes doing it. Proof of that is seen in the first video Uncle Roger reviewed, when her son tastes it. You can see the look of pride in her face. Second, Kay listened to feedback. When she first did it, she was so proud of the result, and hearing, from her own son, that it wasn't good must have been devastating. And that was not even considering the comments on her video (which I haven't seen). In this one, she at least TRIED to make things better, and as you said, the end result is indeed better, since it is at least edible. It is not GOOD, but it is an improvement. And to accept that what you made with pride was terrible, accept that criticism, see what you did wrong, and try again takes a LOT of courage.
